How do I prove I was on flight that was delayed?

I am new to this forum, so apologies if this question has already been answered elsewhere. How do I prove I was on a flight that was delayed? We were delayed for over 3 hours on 2 long haul package holiday flights, one in 2006 and the other in 2008. We have never kept any records, flight stubs or whatever and have only the stamps in our passports. We can just about work out the dates, I think.
How can we prove we were on these flights in order to claim compensation?
Do the package holiday company keep records?
What is the easiest way of getting the evidence we need? We don't even remember which card we used to pay?
Any ideas, help, links, whatever gratefully received.

2006 out of date - 2008 > put your information on flightstats ..... I would start of with FAQ's !!!0

Can you remember what airline the flight was with? (only the 2008 one, forget the 2006 one, you are out of time to claim)0
