You will be fine! think about it like this, its 'only' a roast. Ex partner was a chef and firmly believed in "chefs tipples" i.e. copious amounts of gin, wine, sherry ...anything! By the time the food got to the table he never really cared what the guests thought
He had a couple of tips I've always stuck with, first, make sure there is plenty of gravy and that it is really hot. That disguises a lot.
Second, if there really is a disaster, make sure guests have plenty of alcohol. That way they wont notice!
