I'm not sure where I got the recipe for originally, or if I just made them up? It's basically cooked chicken breast(s), depending on how many people - we usually have 1 huge butchers chicken breast between the 2 of us - cut into chunks, floured, egged and breadcrumbed, then shallow fried. I usually put herbs in with the breadcrumbs, sometimes garlic, and will sometimes coat the chicken in either wholegrain mustard or pesto before breadcrumbing (no need for flour/egg then), it all depends on what you fancy! :D
  • Hi all, I love the aubergine website but I am the only one in this house that will eat it :(

Sat - Turkey curry, nann, poppadums and dips
Sun - Roast leg of lamb (will use some for wraps for lunches and will freeze the rest of the left overs)
    Mon - Lamb broth
    Tue - Spag Bol
    Wed - Fish chowder
    Thur - Chilli with rice
    Fri - Kedgeree

Breakfasts will be porridge for me and cereal for DD and OH.
Lunches will be either HM soup or sandwiches/wraps. Will use the leftover lamb for these.
Snacks will be fruit for me and fruit/crisps/chocolate biscuit bars for DD and OH
I am playing all of the right notes just not necessarily in the right order :D.
  • Mon - lentil soup with bread
Tue - bean curry, baked potato and guacamole
Wed - fajitas, guacamole and salad
