Roasted veg pasta bake we tend to have on one of our veggie days. AND, it means you use up store cupboard stuff really. Just roast a load of bottom of fridge veg. Last night I did it and we had; leeks, mushrooms, corgettes, spinich, tomatoes and peppers roasted in pesto and garlic. Make a cheese sauce, tin of toms, pasta in a big dish, i usually do in casarole dish. Stick it all together, give it a big stir and if you're feeling adventurous then top with breadcrumbs. Serve with salad and garlic bread and bob's your Uncle (or your Aunty in some cases) and it doesnt break the bank. We have 2 none meat days per week, no reason, just because xMarried the lovely Mr P 28th April 2012. Little P born 29th Jan 20140

And longtallsally, try searching for Ottolenghi veggie recipes, he does amazing things with veg. His cookbook Plenty is fantastic, but there's loads of recipes available online, much more MS0 -
Ended up making a sort of veggie chilli kind of thing - made up recipe with hints and bits from all over the place. Served with cous cous and garlic bread. OH managed to be rude after all but in an amusing way rather than about sharing a veggie meal - not everyone gets asked "do you find you f@rt a lot as a vegetarian?" luckily she has the same sort of sense of humour so wasn't offended!
We'll see what it does to his digestive system before I decide whether to cook it again :rotfl:
Thanks for all the ideas folks. Pretty sure I'll be trying some of them out over the next few weeks in a bid to cut down the spending on meat.0
