Things like veggie meat balls are a risk with vegetarians, as some can't tolerate anything that has a meat-like texture. My DD2 is like that - she says if she wanted something that was like meat, she'd still be eating meat! Anything with a meat-like texture makes her heave, be warned.
Oh, no worries - this veggie is not remotely like that. From what I can tell of her own cooking, she largely survives on fake-bacon and halloumi. :rotfl:He'd be perfectly polite to her - I'd be the one that has to listen to the moans after she's gone. Either that or he'll consume every snack food in the house in protest at having been starved!
If we were going down the ratatouille & boiled spuds route, I'm afraid i'd have to have the lump of chicken on my plate too. Its too much like the meat & two veg option, without one of the funadmental components!0 -
We quite often do fajitas when we have meat eaters and veggies at the same meal and either all have a quorn mix or make a veggie mix and have some ready cooked chicken available separately. It means every one can just pick the bits they like and with all the salad, salsa, cheese, guacamole, etc. it's easy to forget there is no meat. We usually do wedges to go with them (mainly so we can dip them in the soured cream!).0

The veggie burritos are a good idea--you can leave out the rice if you're not into it, add in salsa, guacamole, sour cream, lettuce, tomato, cheese etc. He won't notice its veggie.
As for risotto texture--its very creamy, a lot like rice pudding in texture, I suppose although you can make it even more creamy if you cook it longer.
Another option, what about some sort of tagine with chickpeas served over cous cous? I don't have anything like that in my list of things i make but someone on here is bound to have a nice recipe.:D0 -
What about something like a veggie curry or chilli. Our can just change the mince for vegemeat or quorn. Alternatively could you make your OH meat chilli and she could have veggie chilli.January Grocery 11/3740

My friend is the kind of carnivore who, when asked what he wants with his meat, says; "more meat". But he loves my veggie curries and chillis. You can add quorn/other meat substitutes or not, it's a matter of choice. Spud curry (baby new potatoes, onions, spinach, optionally carrots, mushrooms, beans and whatever else is around) is always a winner. Serve with nan bread if you can't stand rice.0

One veggie one meat eater here. Try:
Fajitas - Make with vegetables (optional quorn etc.) for vegetarian, and veg/meat for OH
Cottage pie - Quorn mince for vegetarian, seperate meat one
Lasagne - Either quorn mince or roasted veg for vegetarian, seperate meat one
(those two can be made in individual dishes)
Macaroni Cheese, with ham pieces of OH to get his meat fix
Curry - Vegetable one/ Meat one
Burger and homemade chips etc. - I'd recommend Linda McCartney mozarella burgers.

When I make a beef in red wine/casserole type thing, I add smoked bacon, swede, carrots and lots of chunky open flat mushrooms as they are packed with flavour. How about making something like that but without the beef, obviously! and serving with a plate of jacket spuds that people can help themselves to. To thicken the sauce I would use Bisto Onion Gravy granules - They are vegetarian and are really, really nice even for a meat eater. You might need to add the vege bacon nearer the end of cooking or it might be mushy after a long slow cook!
Also, I would dish up whatever you make in dishes on the table for people to help themselves so she doesn't have to take what she doesn't want or be embarrassed for leaving food on her plate, and add a french stick with a couple of choices of cheeses at each meal so that if she doesn't like the main course offered, she can just take a little bit out of politeness but fill up on bread and cheese!
A buffet meal would work well too on the same principle that she can take what she wants. I love buffet suppers and so do my kids. Also, you could then do cold meats for dh to have, green salad, pasta salad, potato salad, cheeses, halloumi, dips with raw veg and crisps, breadsticks, houmous etc.

Confession time.... Many, many years ago, a vegetarian friend came to stay and I cooked us a vegetable lasagne which looked entirely vegetarian but had beef stock cubes and normal cheese in itShe eats meat now and we laugh about it lol

I would fry some red onion, peppers, courgettes and mushrooms and then mix them in with pasta and single cream with lots of black pepper for your friend and separately grill some rashers of bacon for your OH which you can add separately to his portion. My OH doesn't mind veggie food but invariably says it would benefit from ham or bacon!

Could any of you share your recipes please? We are big meat lovers in our house but would like to try more veggie dishes to try and reduce our grocery costs. I was given the Rose Elliot's Complete Vegetarian Cookbook for xmas but so far I have only made the lasagne from it but I hated it. I think this was because it didn't have a tomatoey / Ragu type sauce with it. I'd really like a good vegetable curry recipe. Halloumi curry was going to be my suggestion, but if she eats that all the time it might not be the best option. I love veggie lasagne and any bake with a cheesy or creamy sauce and vegetable, cauliflour cheese etc with either cheese, sliced potatoes and cheese or breadcrumbs on top. Do consider that some cheese is not veggie, as others have mentioned.
I love halloumi and think that's the best veggie food ever.
Paneer, the indian cheese, might be an option?
Or a spinach and feta cheese pie with filo pastry? (This is on my list of things to cook soon as it looks so delicious.)0
