I've got to say that if I was doing a vegetarian meal like a veg lasagne or veg chilli, the last thing I'd feel like doing would be to make a meat version of the same thing for my partner!0

I think with most things you just need an extra pan. Things like lasagne/cottage pie/chilli all use the same ingredients, you just need one pan for the meat part and one for the veggie part. White sauce for the lasagne, potato for the pie etc. is done as normal. Most of the time I use meat recipes and just substitute the mince for quorn mince, and use a little less as it sucks up a lot.0

Wow - thanks for all the suggestions. Lots of things to try to feed to OH on other nights to save a few pennies, not just for feeding my friend.
I'm thinking of putting the following into the slow cooker in the morning:
onion, mushroom, courgette, red pepper, spinach, tinned tomatoes and a tin of some sort of beans - I've got borlotti, haricot, cannelini? and something else (want to try them all at some point and decide which/if we like them so seems like a good excuse to have a go - also got chickpeas but think they might be used in houmous - I know OH hates these from being overfed them in his past)
so gonna stick in the first tin I put my hands on plus maybe some vege stock if its looking a bit dry. And plenty of spices. I'm thinking I fancy something hot tomorrow so maybe cayenne pepper, paprika, maybe tabasco - something along those lines to flavour it.
Serve the lot over cous cous with garlic bread on the side. I have some pepperoni slices left over from monday's pizzas so this is a good chance to use that up - I can dish up the plain cous cous and then chop pepperoni into it for OH (and probably me too!) before serving.
What do you think? Any suggestions for spices/flavouring to add? I've got quite a lot of spices but not a lot by way of herbs. Some sage and some coriander in teh freezer and tubs of dried oregano & mixed herbs. I'm very much at the learning phase of putting meals together completely from scratch - happy to experiment but no idea what goes together yet! Luckily this is a good friend so she'll be grateful that I tried even if its foul (and maybe call at Maccy D's for a non-horseburger on her way home!)0 -
I'd do a Ratatouille and just put some lamb chops on it for the meat eater.0

Not got a slow cooker but I often make this veg hotpot on the hob in one large pan with a lid, takes about 45 mins on low gas (simmer), makes 2 large servings - chop half a red onion and a stick of celery and gently fry in about a teaspoon of oil, chop half a large carrot, parsnip, leek, a few mushrooms and an ounce or two of swede into bite-size pieces and add to onion/celery mix, add two tablespoons of flour and stir to coat the veg then add about half a pint of boiling water or veg stock, half a tin of chopped tomatoes, a large dollop (about two tablespoons?) of tomato puree, a teaspn of dried mixed herbs and 2 teaspns of smoked paprika (gives a lovely, warming, sweet smoky taste, not overpowering, tescos sell it for about 82p), about a teasn of either caraway or fennel seeds too if you like an aniseed flavour, bring to the boil then lower to simmer for about 25 mins, stir occasionally. Add about half a tin of kidney beans (or whatever ones you like, chickpeas nice in this too) and simmer for another 20 min. Yummy served with brown bread or pittas.0

Agree with Sunflower on this one, I often do veggie and meat sausages, mash, veg and yorkshires, it's quick, cheap and always gets eaten.Slightly bitter0

Since you know she likes veggie bacon why not posh BLTS, really nice crusty bread with veggie/meat bacon, lettuce and tomato etc served with skinny fries, homemade onion rings and a few dips0
