I also sometimes make a really tasty pesto:
lots of rocket
quite a lot of walnuts
quite a lot of parmesan
few glugs of olive oil
some chopped garlic
salt/pepper to taste
Sorry the amounts aren't more specific - you can always alter it to taste anyway (especially with the the garlic!)
Chuck eveything in a blender and whizz - if it doesn't blend easily, add a tad more oil, or a few tablespoons of water until it makes the right sludgy consistency.0 -

As long as there is a layer of oil over the top, it keeps well in the fridge for AGES. I haven't tried freezing it...lots of rocket
