Lots of rocket - what to do?

    I also sometimes make a really tasty pesto:

    lots of rocket
    quite a lot of walnuts
    quite a lot of parmesan
    few glugs of olive oil
    some chopped garlic
    salt/pepper to taste

    Sorry the amounts aren't more specific - you can always alter it to taste anyway (especially with the the garlic!)
    Chuck eveything in a blender and whizz - if it doesn't blend easily, add a tad more oil, or a few tablespoons of water until it makes the right sludgy consistency.

    Do you know if it keeps well in the fridge..or can you freeze it?

    As long as there is a layer of oil over the top, it keeps well in the fridge for AGES. I haven't tried freezing it...

    It'll freeze fine; it's just when it defrosts that it'll turn to mush :D
