Spiralingdown, I gather from your posts that your dogs have been living with someone else for a while and it is perfectly normal that they would feel unsettled and possibly a bit whiney in their first few days, even weeks! They are adjusting to living in a new house, with different places to sleep, different people and a different routine.
I know it is horrible if your sleep is being disturbed, but telling the dog off and banging on the floor may just unsettle her further & prolong the problem.
I would strongly advise you get an Adaptil DAP diffuser: http://www.amazon.co.uk/Adaptil-Diffuser-Pack-Appeasing-Pheromone/dp/B001A2X950
These can work wonders in helping to calm dogs that are worried.

Where do the dogs sleep? Are the they warm enough? Do they have enough space to sleep without crowding each other? Can they hear anything rattling or banging outside or inside the house that might unsettle them?

I only mention these things as silly little things like a fence panel flapping in the wind or the dog feeling cold can make them unsettled.
Did the guy looking after them have a set routine? They might be expecting a biscuit before bed time or maybe he walked/fed them at different times?
Be patient and I'm sure they will settle.

These interactive dog toys are great for engaging a dogs brain: http://www.amazon.co.uk/s/ref=nb_sb_ss_sc_1_12?url=search-alias%3Daps&field-keywords=nina+ottosson+dog+toys&sprefix=nina+ottoson%2Caps%2C180
I often use them for dogs that are injured or poorly and can't go for long walks. Plus they are just great fun and lovely to watch a dog use it's brain! I have the tornado and the dog brick.
If the male dog is too strong for you to walk is there anyone else that can help you walk them? One of the worst things for any dog is not to have the stimulation of going for a daily walk and this can result in boredom, chewing etc around the house.

Haltis and Gentle Leader head collars can be great for some dogs but others hate them and leaving on something she hates for a whole week would have probably just made her hate it more. They are not designed to be worn for hours on end. Much better to introduce something like a head collar or muzzle for very short periods at a time and make it as pleasant an experience as possible by giving the dog very high value treats or even a new toy.

If you are not able to access a training class or behaviorist right now, then there is a wealth of information on behaviorist Gwen Bailey's website:
    http://www.dogbehaviour.com/

I would also highly recommend the following book on canine body language by Turid Rugaas. Its only a small book, very easy to read and it really helps us humans to understand what dogs are trying to communcate to us! You can read some of the pages on the "Look Inside"

Good luck, I really hope things settle down for you all soon,

The dogs were always outside during the day and brought into the kitchen at night with the kitchen door open so they could come and go as they pleased. I have continued the night routine with the exception that I don't know what time he done this at, I brought one of the blankets from his house so they would still have familiar smells. I never had them outdoors all day before and know my lurcher doesn't like being cold, due to her low body fat she feels it so much more so couldn't do that to her.
I always used to call them into the room they slept in and gave them a dentastick when they were going to bed so started that again but don't think he ever done anything like that.
I got one of the DAP things today so hope that will help.

I phoned the girl who was working with the male and she's told me a few things to work with him that will work in the house, I'm also going to see if the old football pitch I used to take them to has been reopened. It is an enclosed space that was used by dog owners because it was a safe place to let them off lead as it was unused but was closed after so many owners failed to pick up their dogs mess  sometimes it was so disgusting in there that a few of us used to get shovels to clear it out so our dogs could play without getting covered but the council got fed up with it.
The lurcher has had her walk and the boxer has had his training so they're now both lying on the floor after both running around upstairs to see what's there. Maybe they'll have a better night, I have made sure they've both emptied themselves after dinner so will be locking the kitchen door tonight to see if that helps them. Other than sleeping in the kitchen with them I don't know what else I can do.

Edit - just looked at your link for the interactive toys, we have Kongs for each of them which they love and a kong that you put treats into and they have to move it to get them out so i'll have to remember those for training in the morning.
With the brick one do they have to move something? We have cups we use and put them out, hiding treats under one, most times the lurcher finds them quicker than the dozy boxer but he gets there in the end
