Best way to cook Sea Bass?

    I love sea bass - and watched a chef do the salt encrusted one. and doubled up laughing! for one thing - THAT much sea salt COSTS a fortune (and I am MSE!) and for another the chef actually added salt to the finished dish saying that the salt doesnt penetrate the fish! Doesnt permeate the skin or something - so I thought - why not do it 'en papillote'? so my favourite way of serving sea bass is to wrap it up in parchment/baking paper and shove it in the oven for about twenty minutes, then serve it in the paper parcels and everyone can sprinkle their OWN sea salt on it!
    i DID briefly consider table salt - but the stuff contains an additive to make it run freely and not clump! so your bass would end up on a bed of salt - not ENCASED in it.

    I will tell you how it comes out. It has egg whites in it to bind the salt together so hopefully the anti caking agent won't function. I will keep an eye on it. If it looks like its not setting I will pull it out and put it into foil parcels.

    I think its would cost close to £10 for enough sea salt to do it.

    I am making it in a few hours and the salt has been spiced and the fish cleaned. I'll keep rosamary and thyme ready in case the plan changes.

    P.s. I may have overdone the portion sizes as there are two of us and two 600g fish.

    In case anybody is interested. The salt baked seabass came out fine with table/cooking salt using the recipe that floss2 posted. It baked really hard and took a rolling pin to release it.

    It was lovely. Thanks again floss2.

    I'm looking for a good recipe for sea bass - one which hopefully someone has already used successfully.

    here we go! tonight i cooked a morrisons sea bass. put it in a glass cassorole dish with a lid, added chopped onion 1/2. a bit of chopped garlick one segment.sprinkle salt pepper and about half a pint of UHT milk, cooked in a pre heated oven about 20 to 30 mins, dont let milk boil away. when ready remove fish from sauce put sauce into a small pan, re heat and thicken with a bit of plain flour and water stiring all the time till just right. pour over the fish, add what you want ie chips, potatoes, veg or have on its own but most of all. Enjoy. notice no special measures just do as you think right. I DO. ;):naughty: Oh forgot a bit of butter too
  • I've been here for 5 years and still not mastered the search function (sorry)
    Did my usual, went to tesco at reduction time ........ended up with £27 worth of sea bass for under £1.
    what the hell do i do with it?
    Skin on but head/tail/bones removed.
    I will save my tesco £1 savings stamps this year! .......so far = £50 (full card#1)
    Card #2 £6. I will not be skint at Chistmas this year!

  • Can you freeze it?

    I have done with pouting several dishes in lieu of seabass but as yours was a bargain you can do lots!

    fishy fajitas- cut into strips, dust with seasoned flour and pan fry, serve with guacamole wraps etc

    I have baked whole sea bass with fennel and pancetta, which was gorgeous - was a take on Jamie's version http://anneskitchen1.blogspot.co.uk/2012/06/fennel-and-pancetta-baked-seabass.html

    Hope fully that will give you some ideas!
