Best way to cook Sea Bass?

I have some sea bass out defrosting,
I have never cooked this before, does anyone have any tips? What's the best way to cook it and what should i serve it with?

  • Its nice if you wrap it in foil with slices of lemon and a sprinkle of dill and bake in the oven until cooked.

    A bit late for tonight, but I have it filleted with the skin left on.

    Heat a large frying pan and brush the pan with a bit of oil.
    Place fish skin side down in pan over a medium/low heat and let it cook until the flesh starts to change colour.
    Then turn it over and cook for a few more minutes.
    Turn it back to skin side down and part the flesh in the middle to check it is cooked right through.

    You can season it however you like, but we like it with just a bit of black pepper.

    I saw some seabass yellow stickered in Tesco today, I wish I had bought it now, these ideas sound lovely!

    Thanks for the tips pp's, got quite a bit left so will try something different each week.
    I ended up mixing a paste of olive oil with crushed chili and ginger and basted the fish, was delicious.

    Any further ideas appreciated.

    Hi everyone, I wondered if I could ask some advice please?

    I picked up some whole sea bass in Tesco last night (on offer £2 each) thinking I'd probably prepare and cook them similar to trout, but having got home and googled some recipes I'm not sure I can do them like trout now :o

    Most of the recipes I've found say to remove the head, tail, fins and de-scale - I've never descaled a fish in my life, help! :eek:

    The fish I've got aren't huge like some I've seen, probably about the same size as a rainbow trout, so was thinking one per person should be ok? :confused:

    Any ideas and tips as to what I can do with them please?

    Cooking them like trout will be fine.

    To descale, take a medium sized chopping knife and with the BLUNT side of the blade, run the knife, at an angle of about 45 degrees, firmly across the skin of the fish from the tail end to the head. The scales will then lift off onto the blade.

    Don't use the sharp side of the knife as you could cut the skin.

  • I usually do 1/2 a sea bass per person - it is a really rich fish. Cooked like trout is fine. HOw was it??

    When you have descaled we alwys put whole fish in foil with lemon slices, season and fresh rosemary if you have any otherwise we cook it on the barbecue same way but probably not barbie weather today! enjoy
