so how does the person who submits the payroll know what hours you have worked?

From the work schedule, the majority of the time it is right.
If you are only being paid for the hours that are on the schedule that is drawn up in advance rather than those that you end up working, the simple answer is to only work the number of hours that the schedule says and no more. Unfortunately that's likely to get your contract terminated, so only you can decide whether you'd rather have a job that is in effect paying a lower hourly rate than you expect (and is that rate above or below NMW?) or get the correct pay that could soon become no pay.

We're supposed to get paid for overtime too, and I do usually, but there are still always missed hours. I'm on minimum wage, so any underpayment will put me below the NMW

Frankly I don't see what you are going to be able to do about this. You have no actual evidence of the hours you say you aren't being paid for, and you are on a zero hours contract which means that there is no legal requirement to offer you any work at all. But the only way to take this forward in law is to first deal with it formally with the employer. So that means that you will have to write to them outlining your claim of underpayment and telling them that you expect to be paid this money owed.

Get all changes in schedule in writing.

Start with asking the boss for the hours owing(itemize the miisng hours) in writing.

once you have some records ask the boss with the records.
still no action followup a reminder CC: the boss's boss and head office.

Bring it up in meetings when there are others there and especialy if there are more senior/regional/HO management

get others to do the same

This will either be accepted practice so nothing will get done* or they may take it more seriously and investigate.

    * Oh yes start looking for another job, if endemic accepted policy they will stop giving you work.
