swordfish steak, put in a hot pan and seal each side add butter and lime cordial and a pich of five spice ,cook until the lime and butter has caramalised, lovely.

Swordfish steaks
I marinade in orange juice with a bit of Cajun spice and a little sugar then fRyan in pan before adding marinade back to pan. Orange juice makes a nice sauce and stops fish getting too dry. Works with cranberry juice as well.

Sounds good. Thanks Jamsponge + Squigs. Fry or griddle like a steak then it is. I got a couple of big steaks with UBD 10th so I'll try one way tomorrow and another the day after.
Had some lovely whoopsied M&S Lochmuir scottish Sashimi smoked salmon tonight that came with loads of tasty soy and wasabi dip. Wonder if I could use the leftovers of this with a bit of olive oil to marinade for one of the steaks?
