Flight deal I found only 5-15 mins ago already gone? Really?

Am trying to find best flights (good times and good prices) for long-haul trip so have looked on a few sites such as Kayak, lastminute, expedia. I found a possible trip on Kayak, looked at the others but when I went back to Kayak to book the deal I'd found there, it already seemed to be gone.
I have a vague memory of someone saying the deals don't go but there's something in the search sites that spots if there are repeated searches for the same flight, decides it's popular, and puts up the price. I don't think it's to do with cookies as I've tried clearing cookies.
Is this a myth, and the seats really have already been sold at that price? Or is it worth stopping searching today and looking again tomorrow? Is there a best time of day? (Someone once told tickets come on line in the morning so look then - that's time you're buying, not time of flight.) So do I look again tomorrow morning? Or should I leave it longer and look on Sunday morning?
Or are the tickets really being sold and I should book ASAP?
It's UK to New Zealand in Feb so I thought there was still plenty of time to get a good deal.

The chances are that if you search again tomorrow morning, the good deal will be back. In any case, remember that Kayak does not sell tickets but reports what was available some time ago, so perhaps the good deal you saw at first had not been available for a few days.0

Not really, no. While you might get lucky if there happens to be a flight sale to NZ, long haul flights on premium (as opposed to budget) carriers are not remotely cheap to buy last minute.0 -
