Confused by Orange contract terms - help please

I have been sent a new contract by Orange. On the front page it says under "what is included;"

1GB
Unlimited cross network minutes
unlimited cross network texts

On the reverse page, under a heading "all the information you need about minutes data and text costs in the UK" there is a table which says:

calls to other orange mobiles 10p per minute
calls to other uk mobile networks including T-mobile 30p per minute
standard text messaging per message 10p
UK mobile data usage £5 per 250mb.

So what am I actually paying?

My understanding would be that the prices quoted are for when you go over the limit of your fair usage as you have unlimited

Now you need to check if your "unlimited" package is subject to any Fair Use Policy which redefines the word "unlimited". Try reading the interesting Unlimited Vodafone thread on this page or the next.
