I love those too but sadly never seen them outside of South East Asia.
My one and only experience of Sharon fruit was way back in the early 80s in the UK when it was seemingly a newly found exotic invention. We weren't quite sure what we were supposed to do with it but I recall that father ceremoniously cut it up to share with the family (much as most things were at that time). It was lip-puckeringly sour and I never went there again.Mortgage

Sure, although it's gonna be a bit slap-dash as I was just scribbling it down while we were baking, but this is what I've got:
1 cup Persimmon Puree (need to use over-ripe ones)
Buttermilk (we used yogurt mixed with lemon, not sure how much but probably between 1/4 -1/2 cup)
3/4 cup VERY soft but not melted butter
3 eggs
1/4 cup rum / whisky / brandy
1 tsp Vanilla Extract
2 cups Plain flour
1 1/2 cups sugar
1 cup finely chopped dates
1/2 tsp cinnamon
1/2 tsp nutmeg
2 tsp bicarb
First add eggs to the butter, one by one, gently mixing after each addition - don't over mix, it should remain quite sloppy. Pour the flour, sugar, nutmeg, cinnamon and bicarb into a bowl, mix and make a well in the centre. Pour the egg mixture, buttermilk, alcohol and vanilla into the well and stir gently until incorporated. Fold in persimmon puree and dates.
Bake for 45 minutes to an hour in oven pre-heated to 350 degrees.
We iced it in white chocolate cream cheese icing, but it would have been equally delicious naked. In fact it was so good that I took some home for dh and the kids and unfortunately forgot to tell them it was there and had to eat it all myself0
