It is explained away by some manufacturers as a way of ensuring the print heads do not become damaged due to drying out.
Another reason is that the document may contain a shade of grey and so uses the colours to create this.
Most printers have greyscale setting, which will reduce but not eliminate the use of colours when printing black

This is new to me, though it only works temporarily and only with a few Epson printers
