The insurers have been a bit lax, IMO.
If you paid for the car from your own account and you are also the registered keeper, there should be no reason for the insurance company to pay the policyholder, because the policyholder hasn't suffered a loss.
I suggesting writing directly to the insurance company pointing out that YOU are the owner and keeper and YOU are the one who has suffered the loss. The fact that you allowed someone to borrow your car and they had their own insurance on it doesn't mean they should automatically get the payout. In fact most policies specifically state that they won't.
For example my policy with LV states:ownershiphttp://www.lv.com/upload/lv-rebrand-2009/pdfs/insurance/car/21121973_lv-motor-doi.pdf (page 9)
If your car belongs to someone else, or is under a hire purchase or leasing agreement, we’ll pay the legal owner

Nah, as far as the insurance company are concerned the GF insured it, suffered the loss so she gets paid.
If the OP can prove he was the owner then he might be able to make a civil case against the GF but the insurer won't be involved as they have done nothing wrong.
As others have said there might be insurance issues with what was declared re ownership & who is the registered keeper etc when the policy was taken out but pursuing those won't get a payout for the OP but might result in no payout for anyone0 -
Since the owner wasn't party to a contract with the insurer they probably can't enforce anything in law, but they could still point out the facts very firmly and ask them to comply with their own policy conditions (assuming the have a similar clause about payouts).

Who did she put down as the legal owner on the insurance?
Did she say she was the owner and registered keeper?
