Hi All,
We've got a big family get together this weekend at a self-catering cottage. I offered to cook on Saturday - but there are four veggies (two are small children) to account for.
Any Veggie Barbeque ideas? What else can I do without slaving over a hot stove...so to speak.
I'm a bit rubbish at veggie meal ideas - especially as my oh is a total meatatarian, so I tend to usually do chicken type things for us. Any suggestions would be gratefully appreciated.

My DD (15) is an on-off vegetarian and her friends are veggie and one is a vegan.
if you are BBQing you could do some veggie quarterpounders, which are readily available from Tesco etc. The Tesco own chargrilled quarterpounders are lovely, even for meat eaters. You could also get some quorn fillets and make kebabs with peppers and onions and marinate them the same as for meat eaters. Quorn also do Chicken style burgers which my DD says are a bit like McChicken thingies, and quorn hotdogs. They also do Quorn nuggets which are nice and you can get Quorn mince and make chilli and so on with it - just use it like meat mince and add a veg Oxo for stock.

I like to marinate overnight large chunks of peppers in olive oil with garlic and rosemary. Also veggie kebabs: mushrooms, onions, peppers, potato, courgette with a drizzle of olive oil.Cos I don't shine if you don't shine.0

Turn them until they are blackened all over. Don't worry, the skins are protecting the flesh inside. When you can easily pierce the tuber with a skewer or fork, they're done. Let them cool a bit, then slice them lengthwise to reveal the soft, orange flesh. Mix together the butter, maple syrup and cinnamon, and put a dollop on each piece of sweet potato and serve immediately. You can just scoop out the flesh from within the charred skin.
If you wanted to precook them for 3 mins in the microwave they would grill quicker.

This may be a bit late but I make H/M veggie bean burgers. Heat up a tin of kidney beans for a few minutes to soften, drain and mash. Finely chop a medium onion and grate 2 carrots into a mixing bowl with the kidney beans. Add 2oz breadcrumbs, a crushed clove of garlic, 1/2 tsp cumin, 4 tbsp chopped fresh coriander, 2tbsp tomato puree, 1 small egg (can be omitted if necessary), chilli powder according to preference, salt and pepper. I like a chunkyish mix so just make it in a bowl, but if you want it smoother you can blitz the stuff in a food processor. Divide the mixture into 8 lumps and with floured hands shape into balls and flatten, then grill until golden brown. Serve in bread buns with salad and relish.I like to live in cloud cuckoo land :hello:0

veggie burgers. iceland have bits of vegetables on skewers- corn on the cob, tomato, green peppers etc. there are 'qourn' alternatives of most meat items- hot dogs, turkey. chicken etc.0

For afters, bananas BBQ'd in their skins. When done, slice lengthwise, pour some dark rum (about a tbsp each) followed by thick cream or ice cream.0

Also large mushrooms with the stalks pulled off filled with garlic butter/oil and wrappped securely in foil bbq well. Halloumi cheese is also good on veggie kebabs and grills well but is a bit more pricy. My GFs sisters are veggie, and it is no problem. Tesco Veggie burgers are great. Beats meat burgers, any day. Make sure any cheese you buy is vegetarian.Sweetcorn put on the barbie until it is nice and singed is good too.
Also, make sure there is a part of the grill that is strictly veggie only, and the utensils are used for the veggie option only. You may want to tell the guest that you have made a point of this, and make sure the cook is strict about it too.

I am a meat eater, but love halloumi kebabs on the BBQ.
I just make up my own recipe but here is one from Delia. Its not that expensive (esp when compared to meat) and it is lovely!
