    rachbc that sounds lovely, could you let me have the recipe x

    Recipe is my adaptation of nigella kitchen one

    cook some noodles (I like flat egg noodles)

    boil 1l of stock with half a tin coconut milk
    flavour with fish sauce (1-2 tbs), 1 chunk of ginger sliced, 1 chilli sliced, 1 tsp each tumeric, tamarind (lime would do instead) and brown sugar.
    Heat cooked chicken in the liquid and add veg - I'm using mange tout, mushrooms and broc and heat til cooked but crisp. Taste and adjust salt/sour/ sweet/ heat balance to your preference and pour over the noodles. Top with fresh coriander leaves.
    I shall do mine mildish with extra chillis for the adults to add at the table.

    Monday - mushroom risotto (new recipe, has been on meal plan a couple of times before but never ended up making it for some reason - we ARE having it today!)

    Tuesday - salmon in chilli and ginger with new potatoes and green veg

    Wednesday - Thai chicken curry and rice

    Thursday - friends round for dinner and I'm going to try Nigella's 'Italian' roast chicken, except served with roast garlic new potatoes and garlic bread (it's ok, my friend loves garlic!) instead of her strange barley risotto thing

    Friday - something from the freezer

    Saturday - I fancy a hm curry night but will decide which dishes specifically nearer the time

    Sunday - freezer again, probably cottage pie
  • Here's my meal plan for this week:

    Monday - Roast chicken, Jacket Spud, Sweetcorn Succotash and Corn bread
    Tuesday - Spaghetti Bolognese
    Wednesday - Sausage and Mash, veg
    Thursday - Chicken Curry and Rice
    Friday - Steak Pie, chips and peas
    Saturday - Lamb with roasted butternut squash, onions, potatoes, peppers and mushrooms
    Sunday - not sure yet!

    Thanks for that rachbc, I will def have a go at that sounds lovely and easy to make with even my limited cooking skills :D
