Just me most of the week. (hurrah, I am looking forward to it!)
Tonight: dh here, and wants fajitas. It's not something we do often, but should be lovely.
Monday(first of three just me nights) : Coconut and expensive poncey prepped veg, udon noodle dish.
Tuesday: spinach salad, lemon juice dressing.
Wednesday: a rib eye steak, creamed spinach. (re run of a meal I loved last weekend)
Thurs: veg soup
Fri: probably risotto
Saturday (some one else cooking one weekend night)
Sunday ( undecided but probably involving a lump of meat from the freezer)0 -
Will be making the following in double quantities and freeze for the following week o I can have a week off...well sort of?
Mon jerk chicken in my hm seasooning and hm sauce like reggae reggae but I call mine ragga ragga lol.
Tue hm pasta bake.
Wed hm sfc breasts and wedges.
Thurs sausage casserole
Fri hm chicken kebabs (using minced chicken)on hm naan or hm pizzas can't decide?
Sat curry night, will have friends round. Using my takeaway secrets book.

Macaroni cheese with meatballs x 2 (our meals are always massive and last two days!)

I used this recipe - a Hairy Bikers' one for rabbit stew, with a splosh of cream added at the end as I had some that needed using up; once it was cooked I left it to go cold, stripped all the meat off the bones and stirred it back into the sauce, then put a pastry lid on top and cooked it as a pie. It's really nice, although a bit fiddly as rabbit's as bad as chicken for small bones that take a bit of removing, particularly when covered in creamy sauce!Back after a very long break!0 -

Wednesday - Pasta with greens, chilli & garlic
Thursday - Toad in the hole
Friday - Veg stir fry, nuts & noodles

No particular days but these are the meals I have planned for this week
Shepherd's Pie and Veg
Lamb and Barley soup with toasted sandwiches
Gammon, egg and chips or Gammon, veg, boil potatoes and Parsley Sauce.
Chicken curry and rice
Either Chicken Biryani or beef stew and dumplings (depending on whether there is enough chicken let over from the day before to eek out)
Meat and Potato Pie, Mash potato, veg and gravy or Gammon and Chicken Pie, mash potato, veg and gravy.
Breakfast will be porridge with fruit, Toast or pancakes
Lunch will be sandwiches or pesto pasta with tuna forr OH and I and DS and DD will eat at school/college0 -

I subscribed to this thread a couple of weeks ago in order to give myself a kick up the 'arris and get my food spend and meal planning in order. Just me and my DD at home termtime (elder DD is at Uni).
Here is my dinner plan for the week:
Mon: Meatballs in Tomato Sauce and spaghetti with garlic bread. Meatballs are premade by the butchers I use; Sauce is homemade in a large batch then frozen in 2-portion size containers; garlic bread is from Farmfoods. I often make the garlic bread but also buy in as a time saver.
Tue: Breaded chicken fillets with wedges and whole green beans. Homemade wedges and self-breaded chicken. Farmfoods veg.
Wed: Chicken and Bacon salad with croutons and toasted Ciabatta. Homemade croutons and dressing.
Thurs: Shephers Pie with veg and gravy. Homemade pie with frozen veg.
Fri: Breaded chicken goujons with vegetable rice and salad. My daughter loves to get involved with making the goujons - I think it's the messy nature of the process!
Sat: Homemade lasagne and salad. I normally buy this in frozen but I thought I could do better - plus my daughter isn't a fan of the white sauce so I have got a recipe that we will be trying to make together - hopefully she will like this version.
Sun: Roast pork with roast pots, veg, york puds and gravy. Only york puds are bought in; veg is fresh steamed.
So that's it for this week; I know it's a lot of chicken but we both really like it! I have pretty much my planned all my meals out for the month and bought all the meat required.
I haven't included breakfast and lunches as DD will have toast/muffins/cereal in the mornings and packed lunch for school.
I will need to stock up as the month goes on for:
Bread
Milk
Salad
Potatoes
I can see the benefits of meal planning already. Too many times I would grab some chips from the chippy or nip down to KFC or Mcd's as it was quicker and simpler - trouble is it gets expensive at £10.00 a time for us both - do that once a week and it's £480.00 wasted.
At the moment my recipe selection is very basic but I am going to keep trying new things as time goes on - I am actually enjoying researching for more varied/interesting food combinations.
All comments/suggestions welcome
