Not the sort of thing that I would go to either, even though we have friends in the Camargue, they would not suggest it as a day out.
This article is from this year and is rather graphic!! The bull does not stand much chance, unfortunately.

In southern France there is bull fighting as in Spain which is horrible. But there are also courses camargaises which are much nicer. The bulls survive and are top of the bill. Men try to get ribbons from the bull's horns in a very athletic display. Well worth going to.0
