I've not read all the replies so excuse me if im rehashing old turf..

We've done this setup frequently with our insurers (direct lie) who've never had a problem with it. I think in your situation op, the insurers are trying to be picky because your SO was driving a car registered to you and they simply want to wriggle out of paying. The V5 states that it is not proof of ownership however what it really boils down to is who you told them owns the car. Currently, my SO is using her car and I'm the one with the policy on it with her as the main driver with myself as a named driver. We've always had quirky insurance setups for various reasons (one being that before the new insurance rules, it meant I could use two cars on one policy as long as she owned one of them and likewise she could use my car).

My insurer assume that registered keeper / owner are the same thing. One of our cars is grey area.. it's registered to the SO who never wanted it but financed it for me, i am the sole user of it, she refers to it as my car yet i refer to it as her car that i have exclusive use of. It got pranged a few years back and the docs all said that I wasn't the registered keeper or owner of it and they still paid out despite me crashing it (she wasn't named on the policy though). They then decided they were keeping the car after writing it off even though the policy was mine and I had agreed to it but the car didn't belong to me for me to agree that they could seize it in the event of a write off. This (again) was stated on their own documents that they had sent me so they couldn't wriggle out of it and eventually agreed to release the vehicle for me to fix myself. I did write to them and ask them to clarify who now owns the vehicle as they'd charged me for the salvage of it and they refused to say anything about it. To this day we're still none the wiser which one of us now actually owns it - before the prang it was hers but it they sold it back to me after thieving it..

I guess what I'm trying to get at is check your documents, get your facts right in your head and stick to your guns before they try to void the policy from the start date.
