Have you unlocked the BlackBerry? Do it now. Pay the 99p and at least it will done by tomorrow.
You can order the GiffGaff SIM now and hope that it gets to you by Tuesday. If it does not, you lose nothing.
In the meantime, you can pop into a T-Mobile shop or Tesco(or similar)o to obtain a SIM with a Blackberry Plan.
You may need to then call T-Mobile from another phone(they can do this in a T-Mobile shop) in order to ask them to apply the BlackBerry Plan to the SIM. Then you can top it up with £10 to activate the plan.

Once activated, she will have access to unlimited browsing abroad for a maximum of £4 per day.
No chance of a shock bill. If the GG SIM arrives then you can attempt to activate the SIM and apply a BB package before she leaves. Though it will be tight. At least you'll have the T-Mobile SIM as a fallback.0 -

The other option is to stick with Orange, but I wouldn't chance taking a contract phone abroad, unless your daughter is very sure of her usage pattern.
To this end, Orange have a 30MB package for £6 per day. Text ROAM to 1139 to activate.
But of course, if she goes over that, the costs can be high.
Too expensive anyway in my opinion. Ditch Orange. Even T-Mobile will be better as you cannot spend more than the £4 per day limit and they'll never cut you off.0 -

Ditto. Unlock the phone. That way your daughter at least has the option of buying a local SIM card in Turkey if she wants to.0
