What should I do about this buyer?

I'm beginning to think that buyers saying they haven't received the item when they have is a much more common problem than you'd think.
Just last week I had a buyer say they hadn't received a dress I'd sent. I offered to send another, and claim from the post office, and she replied that she wanted a refund. I was suspicious as I had actually got proof of posting at the post office, but the printer was broken, so the clerk had had to use old fashioned stamps. This makes it look as if it'd been posted without proof, so leaves a seller with no leg to stand on.
In an aside, I also have problems with a post office clerk who's too lazy to write out proofs of posting, and he also gets really stroppy when I want to pay a cheque in. (he says I use up all his envelopes!) I don't think they want our business.:beer:0 -

Whilst I appreciate that a COP c/w stamps and no PO stamp over the stamps leaves a seller without a leg to stand on..... As long as the stamps have been "stamped", there should not be a problem?

I just had to do a refund. Item bought 5 weeks ago and buyer says she went away immediately after paying by paypal and would not have been there when item arrived.
I obviously had my COP so told her i would be putting in a claim and she was quite happy to wait so I completed the claim form expecting the post office to find the parcel. I really believe it is in the sorting office as it wouldn't have gone through a letterbox so it has to be somewhere, but within 5 days (my fastest return ever) the post office refunded my full amount which I have already returned to the buyer.
fiendishly, if you are having trouble getting the post office to issue receipts then just ask for a batch of forms P326 and have one written out when you go to the post office and all they have to do is stamp it. I don't ever get a proper printed receipt.
