Probably a gall bladder. Apparently they taste bitter. Might be a rabbit's? Mice have them, but rats don't.

My sisters cats used to leave just bits like this on her carpet when they were of hunting at night, yuck! yeah it probably is part of an animal, but which animal you will probably never find out!
Also when our old cat unfortunatly got hold of the hamster (still not quite sure how he managed to get hold of him as we thought the cage was secure, it was one of those glass tank ones which he somehow broke into the lid).
