    chicken curry

Strip the carcass, use the breasts for above type dishes, then the legs, thighs, bits for pie filling.

Make chicken stock with the carcasses - just throw a couple of onions, 2 carrots, stick of celery if there's any lurking. Simmer for an hour, fish the bones out and strip any lurking chicken - would give enough for a risotto.

Strain the stock, leave to go cold, skim the fat off in the morning and freeze in portions, fab for risottos etc.

My brain is empty now :)

At times I wish I wasn't veggie - chicken and mince recipes sound so much full of flavour and more exciting.

I am about to look up recipes for courgettes....rock and roll!

If you like pies, why not do a stew type mix with chicken and top with mashed potatoes (or your cheese and onion mash, sounds lovely :)). So, shepherd's pie with no shepherd but a chickenherd instead. Add more cheese on the top if you feel really adventurous, or add a beaten egg to the mash before bunging back in the oven, makes a lovely topping :).

Have never tried egg in mash. Will give it a go. As well as Tillys chicken soup. Thanks. Freezer at mo looking pretty fine.

Fetched kids back from 11th session music and stopped off at shops as kids wanted some bits and pieces. Did end up buying some mince from asda ready for next day off. Onions home grown and strung up in garage (forgot that last week and bought some)

Was thinking of looking for recipes as well for stuff like faggots and meat loaf?? Again I have to go carefully as I do have a tendency to make perfectly good food awful!

New signature to match grocery challenge - not sure will manage but will definitely try.
Bought a few bits on ebay for christmas and ordered next weeks asda.
Have planned out my next batch cooking... OH gives it a few weeks life only, but getting quite into it. Yesterdays chicken casserole for dinner today.
Having a chinese for tea though as was going out to celebrate anniversary but decided to buy new shrek dvd and order in, thought would save money but still make a pleasant change.

Good luck with the batch cooking I think once you get into the habit of it you realise how much easier it actually is having a freezer full of "ready made" food - it is time saving and money saving too as you don't have to waste lots of fresh veg if you don't use it in time (I was bad for doing that with just the 2 of us!).

Hope you enjoyed your chinese we had one on Friday it was YUM!

Thanks Ammonite. Did some more meat pies, lasagne and spag bog with some different versions fof dd2 who is a bit fussy. By the time asda arrived I had filled the freezer so plans for meat balls and meat loaf will have to wait till next week.

Booked holiday for next year last night, via topcashback. So hoping will have a little return on it. Turkey for 2 weeks. DD3 dead chuffed as despite having been to kenya on safari and gambia she feels that she is holiday poor as all her mates have been to turkey, poor child. It was Skeggie when I was a kid.

Bought 3 collage photo canvasses for christmas gifts from ebay. Bought one that arrived last week for dd2 birthday and so pleased, thought id get one for dd1 dd2 DH.... is this similar to batch cooking??

Last months payment finally showed up, now less than 90k (officially) ... yippee.

Had to put a npd on ebay buyer as still no communication, feel mean but its been 10 days. Some 99p items on (2 with bids) but waiting for no insertion fee weekend before dump all the unsold items back on.

Haha - my parents were both archaeologists - summer 'holidays' were whatever muddy field they were digging in for work in the posterior end of nowhere! :rotfl:

Unfortunately my parents were into bowling. long hours spent circling greens....

Eventually when got to 16, they asked if I wanted to come, mmmm NO, so they cheeky !!!!!!s booked and went to Switzerland. They never mentioned that when asked if wanted to come!

DH and i very into travel, spent first year together backpacking round australia, and then I was studying and got a month off each year, which we used to backpack round europe. A few years of decent travel before the kids. When kids little, very much about 2-4 hours flight time (esp when 3 under 4) but now feel can really travel further afield. Last couple years been about cash. Kenya safari was our MF celebration.....

NSD today, work then swimming lessons (for kids, i went to aerobics)

1 of my 99p items sold, got a pm from someone who bid on a collection only item before realising and lives in somerset (i live in the midlands) so did a retraction for her.

Still nothing from other weeks bidder, how long do you need to wait to close a claim please?

Got to work, realised not taken anything out of freezer, DOH! :o

Day off tomoz and another weekend off. DD1 wants to go clothes shopping  shes a teenager :eek:her sisters are also wanting to come:eek::eek::eek:

Amassing a little pot of cash in topcashback, holiday cashback not showing yet though. ;)

Heating is now on but has been really cold and washing not drying outside. :(

Frustrated as maxed OPs this month and still cash sat in pot as cashed in endowment, which will pay off max for 2 more months. Still working just as hard though as hopefully can create enough money to max in January.
Am using almost sneaky methods, like got house insurance quote, beat it, put the difference into pot, OH doesnt need to know. Travel insurance / parking same. its like being a sneaky shopper!

We want a new telly and still have gizit furniture in lounge after renovation (have another lounge) so agreed with DH to buy furniture / telly as our christmas present to each other, with a max £20 for a little gift to each other. We said we'd change furniture after christmas (last one) but bank account has only just started showing signs of recovery. Did buy corner settee but from an auction house (selling seconds / ex display) and was literally a fraction of the cost.
