:D Thanks. I have recently joined Pinterest and have discovered lots of new veggie dishes. OH does not eat meat, just fish and fish can be expensive (get some good deals in the whoops section though!) I get bored of Quorn all the time so needed inspiration for new dishes.
    Here is the recipe:

Hi, you cook up some egg noodles. Then simmer chicken stock, dark soy sauce, peas, sweetcorn and left over chicken for a few mins. Thicken with cornflour and then mix with the noodles.

Recipe is on the Annabel karmel website just search for pot noodle.

Here's mine (we tend to eat a lot later than the kids because my other half is always late back, and the youngest is a fussy oik, so the menus tend to be two-fold *rolls eyes*)

Mon - Tomato pasta with the kids as OH is away
Tues - Ovenbaked risotto / JP & cheese & beans
Weds - Moroccan chicken one pot / Chicken katsu
Thurs - Stir fried noodles / Meatballs and spaghetti
Fri - Butternut squash curry / HM fishcakes

We're not sure whether we're at home or not at the weekend so I'll see how it goes.

  • Hello again all. Right here goes as its late:

    Breakfasts are porridge with toast

Lunches salami or cheese sarnies, yoghurts and fruit

    Dinners are as follows
Mon - left over chicken and bacon pasta
Tues - pork meatballs and pasta
Weds - potato, spinach (from the veg patch) and chick pea curry
Thurs - baked eggs and hm bread
Fri - sausage, lentil and bean stew

Made some flapjacks today so the kids will have a treat to come home to!

Good luck sticking to your plans this week all. We were pretty good last week - money was tight so not much straying!
  • Our menu plan is Sat-Sat. We've got a funny week this week, but I'm proud of myself for planning in lunches for days where there are no leftovers.

    Sat (last night) stir fry-OH
Mon- Pork joint in SC (never tried this before)
    Tues- Tuna pasta-OH
Wednesday- I'm away, OH can fend for himself
    Thursday-Sandwhiches for lunch, Fajitas
Friday- If not out, Fish and chips (OH), sandwhiches for lunch for OH since not enough chicken to do lunch and dinner fajitas.
    Saturday- Curry
