  • Hi B/Brain hope you don't mind I have copy & pasted the mushroom recipe to my cookbook online,I will make some and freeze them for use after christmas.I too don't get a 'soggy bottom its all down to the heat in the oven :):):)

  • I need to re-price the encroute recipe, the tomatoes had gone up in Morrisons today they are now three tins for £1 :(

    So they come out at 16.5p for half a tin rounded it up to 17p

    Total cost now is £2.32 or 58p a portion
    I know that it doesn't sound a lot but to many an extra 4p can tip the balance of their budget :(

    What a shameful place this country has become :(:mad:

  • Had a cheap and cheerful macaroni cheese special tonight that fed 5 of us
    I used
    1 pkt budget spaghetti 20p,
    2oz/50g Aldi extra mature cheddar, grated 30p plus 2oz/50g 30p to go on top
    1tsp dried mustard 8p
    I onion diced 7p (Aldi 5 onions 33p),
    2oz/50g flour 5p
    ½ pint/300mls milk 47p
    ½ pack Aldi pepperoni slices (99p) 49p

    £1.96/ 39p a portion

    Dice the onion and put in boiling salted water with the pasta

    Make cheese sauce as usual using flour, mustard, milk and cheese.

    Mix the cheese sauce into the pasta/onion and put into an ovenproof dish.
    Sprinkle over the rest of the grated cheese and lay the pepperoni slices on top, put under a hot grill until the cheese is golden and the pepperoni is cooked.

    I wonder what the new super six will be tomorrow?! Anyone?

    I stocked up today with the current offers so will have loads of fruit and veg in tomorrow :D

    I filled two carrier bags with food today for £10.53! :money:

    I have just made stuffed mushrooms from some bought on last weeks super 6.
    I cut out the stalk and chop and fry up with an onion and 2 slices of bacon ( snipped into pieces. I then toasted a couple of slices of bread and diced up and add this to the mixture in the frying pan ( you could use cooked rice instead) You can then add anything else that needs using up in the fridge - in my case half a tin of sweet corn. Add the mixture into the mushroom cup and top with cheese. Bake in the oven at 180 for 20-30 minutes. This works well as stuffed peppers too. Really filling and I reckon under £3.00

    Shame the mushrooms aren't on again this week - I agree this weeks selection not that inspiring. Although I do think Aldi need some sort of recognition for encouraging healthy eating on a low income - I heard a woman saying her children had never tried persimmon until last week and they loved them.
  • I always keep the stalks to turn into a stock with which to make sauce and soup from, then the stalks get thrown into whatever I am cooking, so tonight I am doing a cottage pie, the stock is made and cooling and the stalks have gone into the cottage pie with the rest of the mushrooms.

    I went in to Aldi today to buy more mushrooms, apples, and pears before the change over tomorrow.

  • I got 3 punnets of raspberries for 50p, 2kg of satsumas 50p and 2kg green bananas 50p on the market tonight just before they closed :j

    So the raspberries have gone into the freezer for making my christmas gateau, some of the bananas will make a nice banana cake and a banana custard, the rest will just go into the fruit bowl.

    I make a fresh-tasting winter salad using a mandolin slicer to prepare shredded firm cabbage, shredded onion, a little grated carrot and a little grated apple. I mix all this together with salt and plenty of lemon juice. You can also add a tablespoon of mayonnaise if you like. Very quick to.make, and you only shred as much as you need for that meal.
