    15 minute tuna linguini.

put some linguini on to boil, meanwhile,,,

fry a small onion in some olive oil till brown,
add some chopped garlic, stir stir,
add some dried chillis (to taste)
tip in a small can of drained tuna, stir stir to get a bit of colour on it,
add a small can (or half a large one)of tomatoes,
a splash or 2 of balsamic vinegar, stir well,

by now the linguini will be cooked so drain it and add it to the tuna and mix it all in together.

yummy and the tuna and toms you can buy cheapo tins so its a cheapo meal :T

  • Baked potatoe/s in microwave-10 mins. Meanwhile prepare a slad with chicken, ham, tuna, scrambled egg to go with it.
    Potates 10p max
    salad 20p
    tomatoe 10p
    scrambled eggs 15p for 3
    Mayo etc 5p
    60p for this version.
Or bulk cook a chilli or curry to serve about 8 servings and freeze in "tubits". Bulk cook rice and freeze in portins also. My recipes work out less than 50 p per serving these take approx 8 mins to re-cook in microwave.

  • A pressure cookers steams food under pressure. Cooks quicker than conventional steaming for root vegetables but personally I dont like the combined flavours or the texture of the food.

I have something similar and also recently discovered the trick of shaving the parmesan with the potato peeler - works a treat! :)

I often add some black olives, if I have broccolli or purple sprouting brocolli or similar green veg I sometimes steam that in a colander above the pasta for 3-5 minutes and add it. I add anchovies sometimes (goes really really well with broccoli / purple brocolli and a few chilli flakes) and leave out the parmesan or if no green veg I add a tin of tuna and some black olives and parmesan. Obviously for veggie versions no tuna or anchovies. Gorgonzola cheese and broccoli pasta is gorgeous too.

Also good is spaghetti or linguine with garlic, cheerry tomatoes, capers, chopped parsley and olive oil:

Aha! Found you! I couldn't remember who posted a recipe for this but I have been looking for it so I could link to it in my Spring menu planner as it has become a family favourite since you posted it. Do you know where it is? I've not been able to find it. :o

    Spinach & feta crowns

buy a packet of puff pastry & roll it out, cut into 4 , put on greased bvaking tray
get a packet of feta and crumbel it
get a few handfuls of spinach soaked in boiling water from the kettle, scrunch out the water
mix spinach & feta & grind of black pepper & a crushed garlic clove
put a dolop in the middle of each square of pastry
wack in oven for about 20 mins on 200
serve with jacket potatoe & mixed salad

    EASY ( and quite impressive ;) )

whenever I cook rice, pasta or jacket potatoes I always make three times the amount and store it in the 'fridge.

Then, then next two evenings you can do egg fried rice or some fried rice with a tin of chickpeas and some stirfry or salad.

With the jacket potatoes, they are delicious cut into slices, fried in olive oil and then you crumble feta over and let the feta start to catch on the bottom - try it, it is the most heavenly thing ;) (tastes like bacon for anyone considering going veggie or for the veggie eaters that still weaken at the smell of bacon!)

Pasta - you can make a hot tomato-based sauce as in some of the other recipes and toss the pasta in it to warm back through.

Don't forget couscous either - just put it in a bowl, pour over boiling water, leave to fluff up for a few minutes while you are chopping some things to put in it. I use whatever we have to hand - cucumber, tomatoes, dried apricots, tins of some sort of pulse, lots of chopped fresh herbs then pour over olive oil and lemon juice, mix in and enjoy.
Great for the next couple of days as a cold salad as well

Soup and bread or beans on toast can be the most delicious meals if made with good ingredients..........

  • Tonight I did my own "wraps". Most of us had turkey and bacon but ds is veggie so he had tuna. I mixed the tuna with mayo in a dish(just cheapy tesco stuff). Chopped up some lettuce, tomato, cucumber and onion and put some in the wrap with the tuna.Took about 10 mins to make 2. Cost about 80p

Pressure cookers aren't just for steaming. They make fantastic soups and stews too.

They're great, you can cook whole chickens in 20 mins. :D
