    My contribution is a plate of spaghetti with olive oil and garlic plus a sprinkle of parmesan. Get a head start on the pasta by filling the kettle and boiling it for the pasta pot ;)

    There is a very good Nigel Slater book (is it called 'real fast food' or something like that?) It's full of recipes that take less than 30 mins.

    I'd never thought of feta cheese with pasta - sounds fantastic. I've got some in the fridge and I'm doing the storecupboard challenge next week, so I'll give it a go! Also agree re Nigel Slater - I kneel before him!;)

    If I want 'roasted' veg in a hurry, I steam chunky veg (3-4 mins)and then give it 5 mins on the griddle with garlic, olive oil and a tiny sprinkle of sugar (to caramelise!) Serve with grated cheese/ balsamic vinegar/ bit of bread/grillled halloumi cheese. etc

    I do similar but pop it into the microwave for a few mins instead of steaming, even faster!!

    Fry some mushrooms/courgettes (I use bacon too). Cook pasta. Mix veg, pasta and cream cheese which the pasta is hot. The cream cheese melts to make a cheese sauce. I use low fat cream cheese and then it's good diet comfort food.

    if im in a rush as such i go for pasta with a suace, sometimes i put baked beans into it as i know then the boys will eat it

    Just what I was going to put :beer: We had it last night after I'd had a long day on a training course. I add a few chilli flakes, fresh herbs, and use shavings of parmesan (use the potato peeler).

    It's known as *Daddy Pasta* in our house - he invented it and the children love it.

    An alternative is finely chop whatever veg you have with some garlic, chilli, and fry gently in olive oil, while you cook the pasta. Add a tin of tomatoes, and serve with plenty of parmesan.

    Omelette (even quicker if you have pre-chopped the veg, ham etc the night/morning before).

    Rice flavoured with stock, added frozen veg, tomatoes.

    Risotto can be done in about 30 mins.

    Yorkshire puds, (veggie) sausages, veg and gravy.

    Depending on how strict a veggie you are, note that some parmesan cheese is Not veggie (I read they use baby cow rennet)
