I have a soy allergy, a soya bean could kill me. However, I can have anything which has soy lecthin in but nothing with soy protein. Lecthin has the protein removed which I'm told is what causes most people's allergy/intolerance.

  • Zingy, I really think you should try and see another GP for advice. I saw my gp about 8 times feeling dreadful complaining of no energy, bowel problems nausea, joint pain, pins and needles etc I thought I was going mad I felt so ill. After my biopsy for coeliacs came back positive I was having problems with about 15 different foods. I kept a food diary and with support from a hospital dietition I managed to slowly introduce each food again. The cause of my food intolerances was my damaged villi and once this healed problem foods did not bother me. I suppose what I am saying is please try and get to the root of why you have food intolerances and make sure you are getting enough vitamins. I now have vitamin D defficiancy and am taking tablets from my gp for this. I am careful to eat non dairy vitamin d rich foods but coeliacs can have a problem with absorbing vit d so my consultant says.
A good gastro doctor will take you seriously and find out the root of your problem.

This is based on using a tin of chickpeas but if you cook them yourself it's about 400gms once boiled.

Drain on kitchen paper, toss in a bowl with 1 tablespoon of olive oil, if this doesn't coat them all then maybe add a little bit more. You can just add some sea salt or spices like garam masala or cumin (start with 1 teaspoon of spice and see how they are, don't want to overpower people's tastebuds. Spread out on a baking tray and put in a 220 C oven for about 30 - 40 mins (check they're not burning by 30 mins) They should be crispy and crunchy.
