Wine in risotto?

Can you use red wine in risotto? All the recipes seem to say white but I have some red left over and don't really want to open a bottle of white.

    I've never tried it but if I had left over red I'd use it........it should taste just as good but the colour will be affected and your risotto might be a bit pink.

    Make it a tomato and redwine risotto :) Some tinned toms, tomato pure, redwine and vegetable stock. If you have them then sundried tomato's would go nicely too :) Perfect with some choritzo sausage chopped up and bunged in :)

    I agree go for it, after all it isn't going to prevent your risotto from risotting :D

    I always use Vermouth in my risottos (can't remember which cook I picked that up from -Jamie, Nigella ?) The advantage of this is the opened bottle keeps indefinitely. If I opened a bottle of wine for a recipe I'd drink the rest :rolleyes: Vermouth is good for any recipe that calls for white wine. Marsala is good too for red winey dishes.

    Do you mean like martini bianco? I have a bottle that was foisted on me and I don't like it after a bad experience when I was 17(! long long time ago) If I can use it up that'd be good as long as it doesn't taste too much like I remember when cooked

    Yes, you can use red wine in risotto- it will change the colour somewhat so be careful what ingredients you are adding if you don't want to end up with a maroon mess!As above, tomatoes and sausage are good. Another cheap ingredient which goes well with red wine and can be added at the end is fried chicken livers.

    Yes that's the stuff. I use the supermarket own brand.

    I too keep a bottle of Vermouth handy (a la Nigella) for dishes that require white wine. For some reason I never seem to have any wine leftover for cooking!!!

    We've even used port in risotto before now, in the absence of wine or marsala. It ended up very dark but it tasted nice (it was a mushroom risotto so the flavours went well. Probably wouldn't taste right in something like prawn risotto).

    Hi,
    if you have children or are afraid that the red wine ruins the colour of the dish, you can also make risotto without wine. Just start adding broth after you stir the rice with the onions. It will taste fine.
