3 "all-you-can-eat" PAYG bolt-on length query

I'm considering the idea of leaving giffgaff for 3, after the numerous lengthy outages and being shown up by my future brother-in-law when he could browse 3G with ease whilst I was stuck going nowhere on 2G. Even if I have to spend a bit more per month.
At the moment, I get a £10 goodybag for each calendar month. Convenient and simple. The alternative on 3 PAYG is to get a £15 SIM only deal and then it suggests in the price details that I have to get a bolt-on for 30 days. Considering giffgaff's goodybags are for one calendar month, what is the practicality of a 30 day bolt-on for a 31 day month, if I topped up and got a bolt-on on payday, then end up being one day short before payday or having to top-up £30 in a month (unaffordable) to cover the month.
Am I (more than likely) misunderstanding things at 3, or is there a way like with giffgaff, I can get all-you-can-eat data month to month with no gap instead of 30 days per bolt-on? Or is there any way a PAYG customer can get "all-you-can-eat" data continuously month-to-month?
Contract is likely out of the question because of a poor credit rating and lack of suitable ID (no passport or driving licence being the main thing).

Why not get a sim only rolling contract from Three instead? They do 300 minutes 3000 texts and unlimited internet for £15 a month and you won't have to remember to top up and convert anything either.
Poor credit shouldn't be a problem with a sim only contract on Three especially as it's only a 30 day one. You don't need to produce any ID if you order from their website.

Thanks for replying, and yes, I have seen that too, but I only have a VISA Electron as a payment method (been refused VISA debit and Mastercards in the past, even for a card my mate, who has been made bankrupt, was accepted for) so I don't have a choice but to go to a 3 Store (I'm pretty sure the same problem would occur ordering via phone).Poor credit shouldn't be a problem with a sim only contract on Three especially as it's only a 30 day one. Funnily enough, I do have the choice to set up a direct debit this time. How odd. Maybe something changed. However, it's not all good, they've held my order because I haven't passed their credit history check and the order is on hold.
