Meal Plans W/B 14/7/12

    Oh dear - very late with mine this week! Last week was stuck to with one exception when I had l/o pasta bake from the freezer cos DH went out to eat with a friend.

    So this week looked/looks like this:

    Sat - M&S dine-in - beef roulades, rosti cakes & starawberry/rhubarb pie

    Sun - Smoked mackerel hotpot (which didn't get made last week - see above), new pots, peas

    Mon - L/O of above for me...DH ate on the road (it was a long day)

    Tues - Quiche & beans

    Wed - DH stuck somewhere so I've had omelette and salad and moved everything else on a day!

    Thurs - Burgers, new pots, coleslaw, salad

    Fri - Bean enchiladas

    Sat - Freezer fish and chips, tinned mushy peas

    These all sound tasty. Do you have recipes (particularly the granola?) I really need to use my slow cooker more too.

    Hi Justamum :) The ideas for the scones, sweet n sour and floddies are here in this post.

    The granola didn't clump together as much as it used to when I made it, more like a muesli texture, but till crunchy and good. It was based on the basic recipe from More with Less Cookbook with the following proportions:

    5 cups of rolled oats
    2 cups of value peanuts
    1 tbsp ground cinnamon
    1/2 cup sugar
    1/2 cup of rapeseed oil
    1/2 cup soya milk

    Mix together then spread into a lined oven dish. Bake at 160C for 1 hour, stirring a couple of times to cook it evenly. When it cooled, I mixed in about 50g (half a value bar) of dark chocolate.

    I really need to get into meal planning. I have a 'master' shopping list which I work from so I never run out of anything any more, but I'm sure I can get the cost down even more if I actually plan what I'm going to cook each week. Famous last words :D

    You are welcome :) Things don't always work out as planned, but I like to think of my plan as a blueprint or fallback. There are occasions pasta or veg + noodles appear instead :D And my spends don't always seem to match with my virtual shop I do first... not sure how that happens! Should be the coming week's menu plans appearing soon I would think. I'd love to see your plans if you don't mind sharing once you start :)
