Re probiotics. It is the lactic acid bacteria that preserves the veg. I find it so amazing what nature provides for us. Hence the importance of keeping plants and food healthy

To preserve the same probiotics in each batch, a little bit of liquid from the last open jar can be added, which I will do as I don`t want that flatulence stage again. Making your own re buying probiotics is very cost effective and costs a couple of cabbages plus a little salt for several kilners full

Anyone care to share a sauerkraut or kimchi recipe?
I adore kimchi, particularly - having been to Seoul several times, i can vouch that they eat it at every meal and it is rather addictive. It was traditionally the food that saw them through the extremely harsh winters they have - they stored it in HUGE (as in around 6' tall) earthenware containers, buried in the garden.I wanna be in the room where it happens0 -
Poking nose in fast - I remember Ivy that year tatties went up in price so fast and a bag of chips was suddenly luxury food. At least going low carb means this one thing won't bother me.
