  • CRAIGY if you've got honey, that's a good substitute and wouldn't alter the taste very much or just use a bit of extra sugar, brown would give a deeper flavour but the cake should be fine with either substitution, Cheers Lyn xxx.

    thanks LYNN i do have honey yayyyyy off to partake in some baking me thinks. tell DOCKY the prince is stalking mummy in the kitchen as theres a chicken in the slow cooker with his name written all over it ...........................so he thinks!!!

    The stems can be striped, and the juicy insides eaten, while the roots can be roasted, then ground up to make a substitute for coffee.

    I would just like to thank you preppers. We've made elderberry syrup at a cost of 52p (lemon and ginger) I used cloves, star anise, honey and cinnamon from the cupboard (some about 3 year old) and obviously foraged elderberries.

    The house smells of medicine come sourness but I have to say it has cleared my blocked nose. I have high hopes for it and will be investing on dried elderberries when I run low on this batch (stored in olive oil bottle but would like a airtight bottle). The amount spent on shop tincture normally will outweigh the dried stuffs.

    A lesson learned for life, one that I will repeat for sure every autumn. Thank you :)

    floppsy.....is barely there lol LYNN,we have one eye, 1 ear and a sorry looking leg minus foot. But it still glows. he also has been blew out for a minnie mouse thing stolen from a visiting friends daughter but when its bed time guess who goes to sleep with him............mutant rabbit, comforting but frightful to look at . we went downthe road of binning it but it was like that Harvey advert on tv....................so its still with us , little amuses the innocent. xxx BEDSIT BOB we dont have ALDI over here but LIDL are doing 24 recycled toilet rolls for 4.50 green bag. they weigh a ton so good strong stuff.

    You can dry your own elderberries.
    Wash and remove any stalks, put to one side till dry.
    Lowest setting your oven will work at (ideally around 50C) spread berries on a baking tray (again the ideal is a single layer, but you'll want to do a whole ovens worth so a few above the layer won't matter). Check after 15 minutes, you are looking for the elderberry version of raisins - dry but with some give, not crisps.
    If your oven hasn't got such a low setting then simply leave the door not quite closed on its lowest setting.

    Next trip to Ikea, you could spend the money you've saved on not buying dried on some of their own brand versions of kilner jars.

    For those who aren't sure what the elder looks like, all you really need to know is that there is no species of native tree which looks similiar. It's a smallish tree with creamy white flowerheads in plate-like clusters of tiny flowers each on a small stem. The plates are held upright but the tiny black berries which are on the tree now are usually dragging the fragile stems downwards. So if you see a tree with biggish untidy bunches of tiny black berries on short burgundy stems, you are looking at an elder.

    ;) I used to make arrows from elder twigs as a kiddie.

    Has anyone ever done anything with rowan berries (aka mountain ash)? This seems to be a pretty common street tree in some urban areas. I believe you can make a tart jelly useful as an accompaniment to game dishes?

    Re dog walking; I don't harvest wild greens along dogwalking areas nor do I harvest blackberries at dog p-ing height. Annoyingly, one of the most productive apple trees I know of is right beside a busy road where the fruits are bathed in constant exhaust fumes. I prefer to do my wombling a bit further afield.

    On the subject of SPAM (the product, not the nuisance on your computer) has anyones spotted it at £1 or so? You can get 3 cans for £5 at FarmeFoods but I wondered if it was available better than that?

    Been to work and came home again. It pays the rent but, by golly, does it take a big chunk out of the day.
