Fuddle I remember baking bread with buttermilk when the kids were small (and very hungry !) you don't need as much baking powder as you would expect, and if no buttermilk available, you can sour-up the milk with a little white vinegar or lemon juice. It isn't quite like yeast bread, but is very nice especially warm straight from oven, with soup or stew. I have not cooked it on a griddle, but remembering how good it is I might try soon.0

As we speak GINNY the book is open beside me :-
Brown Soda Bread
1 lb Wholemeal flour
6 oz of white flour
1 rounded teaspoon of bicarbonate of soda
1 teaspoon of salt
3/4 of a pint of buttermilk/plain yoghurt/soured milk (whatever you've got)
Pre heat the oven to 200degC/400degF/Gas Mk 6
Mix the dry ingredients in a bowl, add enough buttermilk etc. to make a fairly soft dough and knead it lightly until it is smoothish. Form into a round loaf about 1 and 1/2 inches thick and put on to a greased baking sheet. Cut a deep cross into the top of the loaf and bake for about 45 minutes until the bread is browned and sounds hollow when you knock the bottom. Cool on a wire wrack wrapped in a clean tea towel to keep the crust soft.
If you want to cook it on a griddle on the hob, make the dough into a round about 1" thick and cut it into 4 equal 1/4s or Farls and cook them on a well greased heavy griddle/frying pan for about 20 minutes in all, turning them every 5 minutes until cooked through and nicely browned on the outside.

2 x 5 litres of 12% white vinegar arrived today. I dilute it into spray bottles so along with the bicarb, that's my cleaning sorted till spring and beyond. Plus weed clearing when used at full strength! Have used this supplier before - and they usually throw in a couple of free samples of other stuff. Can mail the link if anyone is interested.

Soda bread tastes fabulous if you're hungry. And it can be dipped in soup to fill you up.
I dono anything about gas though we use Calor as there's no mains gas here. So my gas is always on0 -
Never done brown - will give it a try!
Meanwhile here is the bog standard white stuff.
200c/mark 6
40/45 mins
500g plain white flr
1 x tsp salt
1 + half level tsp bicarb
100ml milk
300ml nat. yog
Method
Mix it all up and clag it together.
Put on greased baking tray
Carve a big deep cross on the top (never sure why!)
Ovens vary. I always do mine at 180.0 -
