Stuffed Peppers - Any recipes please

Does anyone have any recipees for stuffed peppers. Need to use up and fancied trying to make these.

    A really easy idea is to buy packet cous cous this could be a flavouerd packet or just plain that you can add things to yourself, bung the peppers in the oven for about 25-30 mins. While they are in there make up your cous cous then when the peppers are ready take then out and pop in the cous cous and stick them back in the oven for another 5-10 minutes depending on how crispy you like them.

    Another idea is to fill peppers that have been partially roasted for 10-20 mins (depending on size) with beaten egg, a bit of salt and pepper( add some cheese if you like) then pop them back in the oven until the egg is cooked.

    one last one is to partially roast the peppers for 5-10 mins then fill them with seasoned sausage meat and roast for a further 10- 15 minutes.

    Voila- really easy yummy dinners,

    fry up chopped onions, mushrooms, pine nuts, anything like other bits of pepper, courgette, tomatoes, add some cous cous, stir in some cheese or else sprinkle over feta cheese.

    I also do stuffed filo that I bet would taste as nice in peppers - butternut (or other) squash, spinach, onions, and pine nuts, wth feta cheese.

  • My mother would fry up some onion and garlic until soft then add some breadcrumbs, parsley, olive oil, egg, parmesan cheese and any finely chopped meat or salami she found and use this to stuff the peppers. Place in baking dish, drizzle with more oil , pepper and salt, pour a little water in , just enough to create some steam, and bake until cooked through.

  • I find stuffing peppers with risotto really nice. A quick way to do this is to use the packet risotto. I find the mushroom one works very well. Cook it til it is three-quarters done according to the packet instructions, then put in the peppers and bake 'til done. Top with some olives and serve with a green salad.

    If you want to add meat to it, just put some bacon in with the risotto when cooking that.

    I grab a pack of Uncle Ben's Lemon and Rosemary rice, crumble in some feta and pop it in the peppers.

    In the over for 15-20 mins and it's scrummy!!!

    a popular egyptian dish with stuffed peppers is fry some mince add any spices u like i usually use cumin black pepper and corriander(add tom puree if u like) and some parboiled rice say a cup for 4 peppers.
    once cooled stuff the peppers and pop the lids back on, u can also do this with courgettes. cook in oven till soft
    or go for north african style and add stuffed potatoes and carrots and pack them tightly im a pan and cover with water til soft.(u can add a sprinkle of cinammon to the filling if u like)
    you can serve this with couscous

    Can anyone help me - a few months ago Jamie Oliver made some stuffed peppers with tomatoes and chillis on his TV program. I can't find the recipe anywhere so i was wondering if anyone knew the recipe or a similar one. Thanks a lot and merry xmas.:beer:
  • I've tried searching and can't find many of Jamie's recipes at all. Lots of stuffed pepper recipes to pick from here, though. Anything you like?
