I wouldn't keep cooked rice for that long personally (there's a thread somewhere about food safety and cooked rice), and I think the peppers may have dried out a bit by Saturday tbh. Would probably be ok if you did it tomorrow though.

Hi you could roast the peppers and cut them in strips keep them in oil in the fridge with some herbs and serve them as an antipasti with the ham fried mashrooms and some cubes of feta or something? or do it as a bruschetta will keep better

you could prepare the filling and freeze it. then just defrost it, halve your peppers and bung your grated cheese on top and then pop in oven. you could also grate your cheese and bag it and keep in fridge. would save lots of time.0

I've kept stuffed peppers in the fridge that long, tightly wrapped in cling film, and they've been absolutely fine. I do, however, use couscous instead of rice, because I wouldn't keep rice two days either.import this0

Stuffed peppers freeze/defrost/reheat really well. I usually make them in batches and freeze to use as quick suppers and they've always been successful.0

I stuff mine with spicy cous cous made with cumin seeds, coriander seeds and a bit of garam masala and sweet chilli sauce, sultanas, fried mushrooms and spring onions, left over roast chicken shredded and mozarella or feta on the top, or just grated cheese if I don't have any.Here dead we lie because we did not choose

Having friends for dinner on Fri and thought I would do stuffed peppers to start. They like spicy food so thought i would fill with cous cous, any ideas what else I can add please and cooking times etc? ThanksJan Grocery challenge
