I think you will find the orangutans are in Borneo, so not really one of your destinations. I could be proved wrong!!!
In Hong Kong one of the highlights of our trip was to go up the Peak. You don't need an organised trip. If you are on the mainland take the Star ferry to HK island and then take the Peak tram for a wonderful experience. Arrange to go in the evening. you can get a meal up there and then watch all the lights come on around Hong Kong. Fabulous.
In Singapore the shopping is great. We visited Raffles and had a traditional Singapore Sling in the bar. It is quite a lot of years since we were there and the food stalls on the streets were closed, but I think they are open again now and are quite an experience.
If you only have limited time in Bali, I would consider an island tour. The one we did was very good and we saw so much more than we could do by ourselves, The Balinese were very pushy, trying to get you to visit their stalls, which was a bit off putting. As I said it is many years ago since our visit, so hopefully things have changed since then.
I can't help on the Australian part of your tour, but it sounds wonderful.
    Enjoy.

We did the hoho bus in Hong Kong, very good, we also went up the Peak, also good.
The Aquarium in Sydney is excellent and the catamaran trip on the river, and of course the bridge!!

Just see the Orangutans at Singapore Zoo.

Borneo is good, but a mission.

Jason Atherton had a new place called Esquina in Singapore. Thats brilliant for food drink and people watching. Inexpensive and a good area of Singa.

Instead of the tram to the peak you can take a bus from the star ferry. Get the double decker (not the green mini bus) and sit at the front right upstairs, it's a good view!

Take the star ferry from HK to Kowloon at 7.30pm too for some good photo ops before the light show at 8pm too.

I did the night safari in Singapore, it's ok but not really my thing.

for the Aussie bit, Sydney in 2 days I'd probably do a ferry to Manly and back, ferry between circular quay and darling harbour (so you go under the bridge) dinner and/or cocktails in Australia Square's revolving restaurant, bridge climb if you like heights.

For Newcastle if it's available I'd go for a hunter valley wine tour as Newcastle isn't somewhere you'd rave about (but hunter valley wine is worth tasting).

Brissie, dunno I've only been there a couple of times for work

Cairns, I'd get the cable car/train up through the rainforest and if you can find a decent one a reef sdnorkelling trip (the big day boasts tend to overload and go to quite damaged reef).

Darwin I've never been to but trips are likely to be to the national parks in the area which are all supposed to be fantastic. I'd just avoid the ones making a big deal of any aboriginal villages as they are probably just doing the usual sell tourists as much over inflated tat as possible.

Are you severely limited for time too?

If not miss KK and head straight to Sandakan. Take in turtle island if you can, and rather than fly - Take the bus between the two making your way up Mt K if you can :D

We were in Darwin a couple of years ago and we found it completely different to other Australian cities (Perth, Sydney, Adelaide, etc) - it's almost like a modern wild west sort of place!

Kakadu national park is worth a visit: cave paintings, walk up to Lookout Point (the high point where the camera was when they were filming Crocodile Dundee II). We didn't see any aboriginal villages in the park as these are across the East Alligator River in protected land but we did get passes to go over with a guide for a day - fascinating.

In Darwin you can visit the State Parliament building - they just use an airport metal detector to check visitors, no charge and you can walk through to the terrace. There is also the WWII underground fuel storage depot - it's signed as Darwin's major tourist attraction!

    Enjoy your trip.

    In HK:

    - Do the Peak as suggested, and on the way back call into the Bank of China tower to go to the observation deck to get a great view of the city. It's free, but you do need photo ID to get in.
    - One night go to the harbour and see the amazing free lightshow
    - If you want to see the Giant Buddha you need to allow a full day really, it's awesome but when I went in Oct there was a 2hr queue each way for the cable car. Very much worth it though.
    - HK is very easy to get around, subway is very good value, it's clean and tidy, and there are a million signs to direct you (in english too) and the staff/people are helpful.
    - this website is great to help you plan

    Sydney:

    - Manly beach is lovely
    - Walk around the harbour/parks to see Opera House and Bridge. You can walk all way over the Bridge on the pavement, and then get train back. Ferries are great for getting round and have good views.

    Singapore:

    - I did a duck tour - which is a vehicle that goes on both land and water. So you tour around the city first, then launch into the river and sail along it! Great fun, and a good way to see the city in a short amount of time (approx 90mins). Good views.
    - Singapore Flyer. It's like the London Eye, brilliant! (you can get multi tickets for these two, or others, cheaper than individual ones)
    - If you are an F1 fan then some of the street circuit is next to the Flyer, You can walk onto it and have a looka round. I was luck enough to be there shortly after the race and got to wander round the pit area as this was open (empty but had all the drivers names on the floor of their garage)
    - Chinatown is worth an explore, go at night and eat outside in the street market

    Have an amazing trip!
