Threaten her with solicitors if he wasn't in sound mind before he died so that letter would be disregarded and she'd be told to return the money, however it would cost probably as much to recover the money, if not more.

There maybe not much you can do, sorry. But someone lose might have another idea.

80 years old and still a thief?

    Happy moneysaving all.

He signed a letter. What kind of letter? If he was sane and in full possession of his faculties you are going to have a very hard job indeed doing anything about this. Giving all of his worldly assets to his g/f may have been his idea to prevent you getting any of it, couldn't it? Recourse to the law in situations like this is only for people with plenty of money to pay solicitors.

Unless Dad was a multimillionaire you are probably best trying to put this behind you.

perhaps his will that he had (hopefully) will back up this letter that she had him sign

Sorry to hear of your loss. But what makes you think your dad was coerced into giving his partner this money?

Have you asked the partner what she intends to do with the money? If he was in sound mind then maybe he asked her to sort the funeral? Or perhaps he owed her money for something? It seems very soon to be jumping to the conclusion that she's a thief (especially as he signed for her to have the money). There are many good reasons why they could have done this, and I think a calm and polite chat with her might shed more light on the situation.

Maybe he wanted her to enjoy the money rather than pay for his funeral, preferring the state to pay for it.

If he had cancer and signed the letter just two days before he died, I doubt if he was of sound mind as he would have been on a lot of morphine by that point.
