Havent tried freezing Philly but its a good idea. If I freeze cream I put it in a bag with a (1ake1and) clip, let it lie flat when freezing. Then you can break off a bit at a time if you just want a small amount for on pie or fruit. I suppose I could put it in an ice tray?

I freeze philly - very successfully. Have only ever used it defrosted as a sauce though, but it's looked perfectly fine for spreading use.

I freeze everything these days :o

Pops it may not be cost effective for you to do many eggs and certainly not a good idea to go out and buy another freezer. Maybe think about a larger one if yours stops working.

How I do a few eggs for frying, they will not be dippy. You need very fresh eggs.
I break one onto a small plate to check freshness. The white must stay clumped and not run all over the plate. I slide the egg into a ziplock bag then seal and lay it on a tray. I do enough to cover the tray without overlapping too much then put the tray in the freezer. Place the bags in a plastic box when they are all frozen. On taking them out of the freezer I open the bag and slide onto a small plate and thaw a little. Then fry as normal. They will have a solid yolk and the colour can look a little strange until it is cooked but it tastes fine.

I do this just to give us another meal option other than scrambled eggs , omelette or quiche. I also use frozen beaten eggs in baking. I freeze them two at a time in thin bags lining a muffin tin then box them once frozen.

Fuddle - for cheese cake I always use basics soft cheese, which I have frozen.
I have also frozen cheese, butter and marg.

My back has finally started to ease, I drove this morning and didnt scream aloud when I put the handbrake on which is a definate improvement. DD says she cant see any difference but I can manage little things today for the first time. It may still be agony but I can feel the little improvement which means that if I am careful it will continue to improve.

Good job as we have three trips out this week, Cadbury world I booked a while ago, we have been given a family ticket to a theme park and my parents have decided to wait until now to declare they want to do a family day out. They usually do Blackpool but as the weather is really unpredictable and DD17 hates the big rides, I have persuaded them to do Trentham and see the gardens and the monkeys this time.

Wandered to Ald! earlier and managed to buy some paint, Oh is furious (and yes I mean absolutely furious) that the woodwork on DS14 bedroom he painted in March has gone yellow - I had bought Dulux not cheap stuff, thinking its our house now need to do the job properly. It was the only paintwork that was needed as it was all new when we built the room (took us 8 months to get around to it) and it went yellow.

After reading on here of some other problems I have discovered that gloss is no longer any good due to the removal of ingredients and that it always goes yellow - unfortunately it looks awful one doorway yellowed compared to the others. So have been today and bought a white gloss acrylic and I hope that works.

Strangely two of the radiators have both started to rust at the bottom as well, so I picked up the metal paint in white too in the hope it will prevent me having to have two new radiators fitted.

Garden is flooded yet again and apparently the local music festival has been abandoned yet it was blazing sun for most of the day the nights downpour was hideous.

PAH - you have to count the success rather than the fails, I know a guy who was a heart surgeon (retired now) and he worked on the worst cases and alot of his patients died, when asked how he coped with the failure he said calmly - what failure? I saved four lives last week! You had two great days and managed alot of things, thats the bit you count, the rest is unimportant. You spent time with your grandchildren worth any price I bet. :)

oh I like the freezing cream tip fuddle, I`ll be doing that

Made nut milk two days ago and very nice results. I made it sweeter and also vanilla taste
1c almonds 4c water and soak several hours
drain, rinse, add fresh water. Liquidise on fast with 6 dates and 1 tsp good vanilla extract. Strain ( i use a nut milk bag, v cheap on ebay)

I`ll be making a thicker version soon as a topping

Also made mixed fruit compote. Any amounts, blackberries, blackcrurrants, frozen rhubarb, strawberries. Simmered slowly. I sweetened with stevia. Great on a bit of plain cake with a topping

Foraged plums today, now stewed. Tidied more on allotment, bit at a time ready for season change as I hate leaving it for all at once

pops, just want to say how I admire the way you have turned from negative to positive. Wd you, you seem to have found a spring in your step and a good example to all

Kidcat we had the same trouble with the paint. I have bought some one coat from wilks to do the stair hand rail and so far it is still white but will know for sure in two weeks which is how long it took the other bits to go yellow. It looks even worse because the walls are brilliant white after several months :(

Thats it grandma it looks odd as all the others are still pure white, I am told eggshell or acrylic should keep the colour so have gambled on the acrylic, if it doesnt work its eggshell next I suppose.

Just got back from a full 6 hour shift as a volunteer at the tea shop on our local park...boy am I shattered now. This mornings volunteers didn't bother to show up at all and didn't let any one know about it so I had to do the whole lot - with Lisakays help....now sat chilling wondering what to do for tea. DH working until 11 tonight and DS watching football...(pulls face).
Lisakay and DD2 and all the grandkids at bootcamp on the park..peace!!
Think will have to make nice cuppa then geet stuck in to dehead all the lavender I've dried to make lavender bags to go with Christmas pressies, or might just carry on with the hoodie for little grandson.
Also need to find some new knitting to take on the Scarborough Flyer..treated ourselves to this lovely day out for next Friday, I wont be able to sit there for 10 hours with nothing to do but look out of the window.
    Righteo kettle calling....

Fayhare...never though to introduce myself, i just started to post after lurking and reading for ages.
I'm 50, living in busy town near Manchester with hubby and 1 son, DD1 and DD2 flown the nest and have given me 5 grandchildren between then. Lisakay being DD1.
I love cooking, reading, holidays and anything crafty.
Perhaps some posters who've been on here a lot longer could write a bit about themselves and give us an idea who we're chatting to...

Foraged another glut of blackberries. I swear no-one is wanting them but me. I can't understand it.

Going to do apple and black berry preserve with this lot. Also going to try a banana preserve as I have a few that is on the turn. Not masses, just want to try it out.

A few preserving questions if I may?

How do I sterilise old jam jars. Do I need a solution? I don't have any solution

Should I store preserves in the fridge? I have always put opened relish/pickles/jams in the fridge but it's getting a bit full in there now. I was hoping that a preserve will cope on the shelf?
