    I've decided to bag the 30 odd heads of elderflower in jelly bags to make straining it less messy.

    I've thrown in 2 kilo of sugar.

    Loads of lemons, juice & zest.

    About 150 ml of white wine vinegar and 15 litres of water.

    I couldn't be bothered with the ratios as I am kinda throwing it in and hoping for the best.

    Last years did very well. :)

    Will leave it a good 3-5 days in the bucket.

    Will see how it goes.

    Whatever happens, it's gonna be drank ;)

    I've used a slightly different recipe - I'm only making 1 gallon, so 8 pints ish of water.

    I'm using 1lb of sugar, 20-odd elderflower heads (what I had left, so didn't bother counting them in), juice and zest of 2 limes (forgot to buy lemons, but had limes in for my elderflower and lime jam, so thought they'd do just as well), and a couple of tablespoons of cider vinegar. I'm just waiting for it to cool to room temp, and then will add a teaspoon of wine yeast:)

    There seem to be a gazillion methods so I'm kinda hoping that nature will assist the desired outcome :)

    I think I've sourced some elderflowers-hoping to go and investigate tomorrow. I only saw them from the car today but if I am right and they are elderflowers, there are loads!

    TATTYCATH My most useful book is Wild Food by Roger PHILLIPS I like it because it has actual photos of the foraged food along with recipes, only downside is it's quite a big book and not the most convenient to carry for identification purposes. I get round this by carrying it in a rucksack, Cheers Lyn xxx.
