Fudge Cakes recipe and words:
Cream 50g of sugar with 50g of butter/marg
Measure out 50g of self raising flour
Crack in one egg and fold in with one spoon of the flour
Fold in the rest of the flour (I added a pinch of bicarbonate of soda too for extra lift)
And by eye I added milk to make it thinner (I'd guess about half a tablespoon, maybe a little more)
Stick it in a pyrex casserole dish and then pop it in the microwave (800w) for 3 mins.
What you do is once the cake's baked, you let it cool and then break it all up really finely. Allow it to cool completely.
Then you make up whatever icing/frosting you want to use. Red velvet cake mixture with cream cheese frosting is very popular but I tend to stick to more English traditional stuff (victoria sponge and butter cream because Mum's picky
So with these I made up a batch of plain buttercream. I split this into 3. One I added a little vanilla to. One I added cocoa powder to. And the 3rd I added peanut butter. (All by eye and taste
)
Then I added the cake crumbs, split equally into 3, to each of the flavoured buttercreams and thoroughly stirred them up. You want it to be a nice smooth consistency but quite dense so it can hold it's shape.
When each one is thoroughly mixed and a 'cookie dough' consistency, you get a small amount and roll it roughly into a truffle sized ball and place on a greaseproof sheet. They'd be fine just on a plate or clean tray. Once you've done this with the entire mix, place in the freezer for about 20 mins, or until they're nice and firm. Then get them out the freezer and roll into perfect balls (or as close as you can get with the consistency you've achieved, the peanut butter ones of mine were a bit flat!
)
In a bowl melt chocolate. I mix a little bit of sunflower oil with my chocolate. Sounds gross but it's what they do with chocolate in a chocolate fountain to get the consistency a little thinner. This means the balls are easier to coat.
Then you will need greaseproof paper. You then get dunking
:D It is mucky and you can't always get a really smooth finish but that makes them look more homemade. I find you get a better finish if you go with 2 thin coats as opposed to a thick coat. So once you've coated all of the balls, place them in the fridge, or for to make it quicker....back in the freezer for 20 mins so they're fully set. Then repeat the process. Now you want to add the toppings of whatever kind you fancy, no rules! 
I added sunflower oil to my chocolate but found it got hick again after a bit. How much should I add?
