Find some luxury hotel somewhere in Europe for £200-£300 a night, and fly business/club class maybe £1000 each, that's still only half your budget.
Good plan. In the £200-300/night range there are some fantastic hotels in Barcelona such as the Hotel Arts, The W or the Mandarin Oriental. Business class flights with BA or Iberia would be about £500 each.0 -

£1000 a day to chill ...wow, you are on the wrong site
you could have have a fantastic time in Vegas for that money in a fantastic suite
It will be hot (very) with wall to wall sunshine and you could have room service every day, rather than all inclusive.
Why would you even want A/I for that kind of money0 -
If you just want to "relax and chill" there's no need to spend anywhere near £7k. Also don't see the point in long haul for just a week, especially if you're only after sun. No point travelling half way round the world to do what you could have done in Europe, and by the time you've got over the jet lag it'll be time to come home!
