To be pedantic, this is actually VCS v HMRC (VCS were the appellant) as it was the Appeal hearing at the Upper Tier Tax Tribunal.

The above ruling, in summary, says that a parking company can't make a valid offer of parking, or levy charges under contract or a tort of trespass, unless they have a propietary interest in the land - which they won't, in the case of supermarkets or retail parks.
Think of it like this: I take out a mobile phone contract with Vodafone, then default on the payments. Vodafone may employ debt collectors to chase up the payment, but ultimately only Vodafone can sue me in court, because I don't have any contract with the debt collection agency. In your case, UKCPS are the agents of the landowner.
I have been providing assistance, including Lay Representation at Court hearings (current score: won 57, lost 14), to defendants in parking cases for over 5 years. I have an LLB (Hons) degree, and have a Graduate Diploma in Civil Litigation from CILEx. If this is a private car parking company then all you do is ignore them and after about 6 to 8 letters they will go away. I myself parked in a disabled bay and got one of their so called tickets and just ignored their letters and eventually they gave the ghost up.0

The claim must be properly defended, and the OP has been advised how to do that.
