Have you considered your mobile phone for this?
The alarm on my blackberry does something like this.

It never occurred to me so I just checked mine and it does exactly what the OP wants.
Set the timer for 10 minutes and hit start. After the 10 minutes the timer goes off and all you need to do is press start again for another 10 minutes.
You can of course set the timer for any time you need.One by one the penguins are slowly stealing my sanity.0 -

Lots of older phones have countdown timers.
We have an old nokia 6300 that we occasionally use as an alarm that has a countdown timer . No SIM in it - just works.
An old samsung that has a timer the you can set for any time, the list goes on ...0 -
In MSE mode and have looked at our phones and cannot see how to set this up! The alarms need you to set a time to go off and you have to press a button to stop the alarm.

I think the problem is that your requirements are at odds with what the majority of users want (and hence what makers design into their product)
You want the timer to ring once after the interval and not ring again.
Most makers presume that the user will want to be stirred into action, and set the ring to either continue or repeat so that the user doesn't miss it; i.e. if the user is out of the room or other noise masks the timer, it should continue or repeat until intervention by the user.
You want the interval to remain set once the timer has gone off. Some timers retain the interval, but many presume the user won't necessarily be repeating the same interval and clear the setting.0 -

If you have a laptop or netbook a program called TClock might do what you want. You can set any custom sound you like for the time604!0

Try goggling recurring timer.
If you use a smartphone you could set it to air-plane mode to stop any incoming calls/text .0
