Stir fry is by far the quickest, at 5 mins top normally.

Otherwise, chopping up whatever veg I have and a can of tomatoes for a quick ratatouille type dish.

Super quick white sauce is 1 heaped tsp of cornflour mixed with a small amount of milk until smooth, then topped up with more milk - chuck in the microwave for up to 2 mins for white sauce.... add cheese for cheese sauce.

    for pasta...

use half tub creme fraiche (half fat or full fat) and a handful of parmesan.... stir in some tomato puree for a change x

serves 1, multiply up the quantities to serve more people

4oz/110g noodles of choice in boiling water for 5 minutes

in a nice :D bowl mix
    1 Tablespoon Hoisin sauce
    2 teaspoons light soy sauce
1 teaspoon chilli bean sauce (optional)
    1 1/2 teaspoons sesame oil

drain noodles, add to bowl & mix

big noodle fan that I am I love it just as it is, but any cooked veg, fish, meat etc you have around can be added
  • I've recently come across this rice (veetee) which takes 2 mins to microwave or fry up. Super easy and much nicer than other similar ones I've tried. They do a few flavours and you can pretty much throw anything in with it! Yum yum.

Any sort of sandwich or toast + is a 5 minute meal but how about frying pan pizza.
2 x soft tortillas. Spread with ketchup, red pasta sauce from a jar, pasata (my fave with some pesto) left over salsa or puree. Add grated cheese and cooked meat. Those mushrooms in a jar are nice as are anchovies. Put the 2nd bread on top. Fry both sides. Careful as the cheese goes radioactive.

This tastes like Heinz Tomato soup - seems unbelieveable but works! Makes loads.

    2 tins tomatoes
    1 tin of baked beans
    1 tin of carrots
    5 pickled onions

Put everything into a liquidiser and blitz well. Heat in microwave for a few minutes.

    Serve with bread.
