    I always keep either home made or yellow stickered ready meals in the freezer to have with a pitta or even a slice of bread when i am in these situations. Stuff like curry, chilli, spag bol, stew and soup.

    you weren't kidding when you said 5 min meals.
    They are for the days when I'm knackered and even turning on the hob feels like a real faff. But I have to say mushy pea soup is actually something I really enjoy - not the healthiest but really filling for less than 10p all in.

    Like people here have mentioned: noodles! I cook them with frozen veg so I don't have to use another pan, and tofu cubes are nice with it. I dress with veg oil and soy sauce, or loosen peanut butter with soy sauce, ketchup, lime juice if I have it, and water to a dressing consistency. I use the peanut butter one if I'm not adding tofu.

    Beans on toast, nicest I think with som vac-packed beetroot and/or spinach or watercress (just-wilted or raw) on the side.

    Couscous can take 5-10 minutes to soak in boiling water from the kettle. Mix in some drained mixed bean salad, cold from the tin. Someone mentioned cooked beetroot, which is a great addition, along with nuts and seeds. Forgot to say, we like this dressed with a just a little mild vegetable oil and smoked salt and sometimes a little balsamic vinegar.

    Muffin pizzas: top split muffins with passata or a tomato sauce and oregano. We somtimes add sweetcorn, sliced mushrooms or thinly slice onion or chives. We then top with vegan cheese, vegan cheese spread or hummus and bake for about 10 minutes at 200C but you could grill them for a couple of minutes until bubbly instead. Nice with baked beans.

    More cooking effort, still 5 minutes:

    Quick curries: mix curry paste to taste, passta/tin tomatoes/coconut cream in a pan with some smaller frozen veggies and a tin of chick peas or green lentils. Heat through and serve with a handful of salad leaves and bought flatbread.

    Quick tagines: passata, the smaller frozen veggies and tin of beans again, but with cinnamon, cumin, paprika, thyme and dried apricots or currants. Heat through and serve with couscous which can be soaking while you heat the "tagine" through.

    Bean Chilli: use a tin of beans in chilli sauce, bluked out with another of kidney beans and some passata. Serve with crusty bread to save time on rice-cooking.

    BBQ Beans: baked beans, pineapple chunks, passata, brown sauce to taste. Serve with crusty bread.

    Now I think about it... most of my usuals are speedy lazy meals! :cool:

    Something I often do if very short of time is to make up a packet :o of pre-flavoured couscous and chop up whatever I have lying around - tomatoes, grapes, onion, cucumber, cheese, beetroot, ham, tin tuna and a sprinkling of mixed seeds. If you have it a green salad on the side - really tasty and very quick. :)


    This is exactly what i do :) its filling, tasty and takes minutes to prepare :D

    Shop bought naan, topped with whatever, in the nuker for 2 minutes. Cut, eat. I use paper plates too .....

    So, it's just an instant pizza really, with an interesting base.

    Currently using: garlic/coriander naan, with chillies, grated cheese and herbs on top.

    I get the ones in the vacuum packed plastic bags - as they've a shelf life of about 2-3 months or more, then once opened I'll eat that 2 days in a row as there are 2 naans in a pack.

    There's some lovely ideas on here that I've mentally noted for future reference. :T Two of my favourite super quick meals:

    Veg satay noodles - mix peanut butter and sweet chilli sauce with enough water to make a thick pouring consistency, and put to one side. Stirfry chopped mixed veg (pepper, cabbage, peas or green beans - or ready prepared veg if I'm feeling really lazy :o). Cook some noodles in boiling water. Mix the drained noodles with the cooked veg and the sauce, and eat.

    Bacon and pesto pasta (more like 10 mins than 5, but it depends on the type of pasta you use) - cook pasta in boiling water. While it's cooking, dry-fry chopped bacon and veg (I like mushrooms or onions best, but just about anything would work) over a high heat until the bacon starts to go crispy. Lift the cooked pasta out with a slotted spoon and stir into the bacon and veg, then stir in a spoonful or two of pesto from a jar or tub. (I do the pasta with a slotted spoon as it has the same effect as reserving some of the cooking water to thin the sauce, but with minimal faffing.) Grind over black pepper and eat.

    Baked fish.

    Put a portion of frozen white fish in a bowl (I use tesco value). Sprinkle salt, pepper, bit of dried parsley, and add a knob of butter and some frozen peas.

    Optional ingredients: soy sauce and garlic.

    Cover with a plate and cook for 3-4 min (850w microwave).
    Leave to stand for one min and serve.

    Very low carb too.
