I usually chop them up and fry them in olive oil, I throw in whatever woopsie veg I have in the fridge, like leeks, courgettes, onions, asparagus, etc Then after about 5 minutes of frying, I pour over a tin of tomatoes, or if I have fresh tomatoes going soft I will skin them and put those in instead, some dried mixed herbs or dried thyme etc a splash of lemon juice. I then simmer for about 25 minutes. I then put it all in a large dish, melt some grated cheese on top. When it's cooled I keep it in the fridge and eat it over a few days, heating up in the microwave what I need, I will have it with mackrel? maybe chicken? whatever is in the fridge or freezer! or sometimes just with crusty bread. It's really delicious and helps with the dieting as it's mainly all veg
kids eat it too!
That sounds like it would be really good over pasta as well! Thanks.
Have made veggie soup that ended up mostly tomato soup, but with peppers, carrot, courgette, potato and onion in. Am having grilled salmon with potatos for tonight's dinner, lunch tomorrow will be leftover take-away (flatmate went on holiday and left all these leftovers in the fridge, can't let them go to waste :P ), dinner will be stuffed peppers courtesy of fudge's idea. There's pasta with bacon and mushrooms for lunch on sunday, dinner will be soup and a sandwich.
Have home made quiche in the freezer, and 5 recipes for lunch/dinner with simple stuff that's still in the fridge/cupboards. 6 if I add a simple pepper stir fry with mushrooms, come to think of it.And your recipe for the sauce makes it 7...
Feels strange having meals planned out rather than being left to whatever I feel like doing in a particular day, but I suppose it really helps.GC September 2012 - £49.04/£80 |GC October 2012 - £50.28/£80 |GC November £63.59/£60 (one adult only)0 -
I fancied a change today so took a tin of tuna from the fridge to do tuna mayo sarnies. Had a shock so had a gander at some of the other items in there. This is why I tend not to go too stupid hoarding stuff and buying tons and tons of food.0

The camera will even pic up the steam off a meal at an angle if the flash is used. My tip for the day is blow across the top of your food as you take the pic to remove the steam0 -

Yep bugs all gone. Found one place they were breeding upstairs....some fishing bait. Cleared that out and still had the problem. Turfed out all the cupboards downstairs and found a box of weetabix hidden at the back of the pots n pans cupboard. Cleared what was left of that away along with about a trillion dead bodies and all has been fine since!0
